I've always heard if you drink milk with something hot, it takes the heat out of what you're eating. Or put some ranch or blue cheese dressing on it.

@Sheri451 True.Chili peppers, contain capsaicin, which is the main ingredient in pepper spray. Capsaicin can cause an extreme burning sensation which can last for minutes or even hour.

@Sheri451 There's a protein found in milk called casein that acts like a detergent against capsaicin.[1]It'll actually pull the capsaicin compounds away from the nerve receptor binding sites in your mouth. Drink at least a half cup, making sure you rinse your mouth well first.[2] You can spit it out, but you won't get as much relief in your throat that way.

Or even bread. It's the capsaicin that confuses your taste buds. Dairy products have a neutralizing effect on it. Bread will mop up the capsaicin. Water does next to nothing.

I watched an episode of The Waltons when I was a child, In this episode, John Boy was eating sausage that was prepared by the aunt that lived in the mountains that had to move, She stayed with them. Anyeay, when John Boy took a bite of her sausage, he immediately went to the fridge and poured a glass of milk, he then told Olivia, "Momma this is the best sausage I've ever eaten." I didn't know then that milk takes the burn away. I thought water did.
