Could you put a second camera up in a corner of the room and make it record a complete production? By lowering the framerate (15 fps or less), limiting the resolution (I'd go 16:9, standard definition with a wide angle) and low sound quality, you should be able to fit a whole day on it. Then just make a time lapse of the footage.
PS: Most camcorders with SD cards have a file limit of 4 GB for compatibility. Keep that in mind so you can start a new video/file in a break.
