  • BEst french style omelettes i have seen are the japanse omelttes technique on youtube. They cook them on powerful stoves and they dont become overcooked.

  • This recipe is kind of contradicting Chef Ramsay's recipe on Scrambled Eggs. Ramsay says DON'T add the salt until you serve it because the salt breaks down the eggs while it is cooking. I am assuming that it is different for omlettes?

  • @MisledTrick I know which video you're referring to - there's a whole "controversy" about when to add the salt among chefs. Some say it breaks down the egg if you add too early, others say it doesn't make the slightest difference. Nobody agrees.

  • @MisledTrick if u see the video of Gordon making the scrambled eggs, he doesnt whisk the eggs.. so the egs are not broken down anyways.. when Stuart makes the omelette he whisks the eggs which has already broken down the egg..

  • @coolsushant additionally, Gordon Ramsay says don't put salt in at the start as it breaks the eggs down and makes them watery! lol

  • I personally love adding the cheese before cooking, and I fold it the omelet in half not like what he did, and with salt and pepper I like to add while cooking

  • Never cheese? I always add a bit of cheese to mine ITS WONDERFUL

  • Two things bug me:

    first he added salt a little too early

    second the heat was on high all the time, I thought he overcooked the eggs

  • adding salt that early just seems bizarre and takes away a lot of the natural flavor in the eggs >_<;;

  • @classicdinner i totaly agree however there are many pepole out there who dont have such equipment and would highly appriciat you showing them how to make an omlet with out using a non stick pan because its really dificult.

  • I had an interview for a chefs job they asked me just to make an omelette for a 5 star hotel i wasnt bad but this is the way they wanted there eggs.

  • i am 14 and i can make a bettre omlette, 2 eggs whisked with salt, cut up 2 bits of bacon in2 small chunks then fry until crisp, whisk eggs again and cut up a handful of cheese then add the eggs 2 pan, once added then add bacon and cheese leave until brown on bottom then fold over flip and brown on other side, by this time the cheese has melted and the egg has been cooked so then onto a plate and enjoy

  • @Konaboy25 It's a basic omlette, and eggs cook VERY quick, so if you wait as long as you wrote the omlette is actually over cooked. This one, is just to the point of being cooked, and you take it off straight away. If you want other stuff in it mix it the egg mixture then after add cheese. It continues to cook after you take it off the heat. It's called carry over heat/cooking.

  • @MiFFiL this one is also overcooked. A french omelette, which he is attempting, shouldn't have all of those bubbles on the outside and the inside should be like a custard.

  • @psychoslap Right AND wrong. A traditional French restaurant/middle class omelette will be as you say, but a French peasant's omelette will be cooked till firm so that it could be taken out with them into the fields, and not disintegrate.

  • @photocide1 Gordon's video was for scrambled egg. But I noticed that as well. You would think the same rules would apply (at least for the putting the salt in) as they are so similar...

  • @photocide1 yes because in the case of gordon's video you are talking about scrambled eggs, which tend to be cooked just until they begin to thiken, so the protein structure could lose the water leaving you a naste watery scrambled egg thing. when making omelettes there's no problem becase they almost cook all the way through.

  • @photocide1 Seasoning in advance only becomes a problem, if you let the egg mixture sit for too long. Here, it was only a matter of seconds between seasoning the eggs and putting the mixture in the pan, so it's not a problem.

  • why cant you add cheese to the mix before you cook the omelet? Are you not supposed to stove top cook cheese?

  • @Dethclops7 Thats correct. Direct contact with a hot pan will scorch cheese. The cheese will lose moisture, turn to rubber, and the edges will burn.

    Omlette stuffing is precooked. When the omlette in a clam-shell shape, right before plating, you put the stuffing in the groove and then turn the omlette onto the plate.

  • @JimmyChiffels if you read the comments, it says you can add herbs, tomatoes, and other stuff. He is just showing the framework.

  • ....he was making a basic omellete. When you learn to appreciate the simplicity and deliciousness of it being as it´s showned in the video, then you can let go and add stuff to it. Cheers!
