May I recommend Wootonga, an Australian sweet sherry.... but not with raw Baltic herring in a mustard sauce.

I once drank a whole bottle full and when I got around to the onion rings and black peppercorns remaining in the raw herring jar, the culinary adventure took a turn for the worse

Projectile vomiting followed, and then dry retching. There is nothing worse than the taste of sour bile in your mouth... well in actual fact there is... Wootonga and raw herring.
