im just wondering how do you use the audio input from itunes, so if you have a song playing in itunes, it will use the audio levels to make a number output

Actually doing the whole structure thing is a lot more complicated.

You have a whole bunch of APIs.

However, there's an official iTunes-Visualizer-PlugIn on the Mac Dev Center,

which is basically just an Xcode-project where you are messing with the values.

@nickthreapleton there is an application called soudflower that allows itunes audio to be available to other applications, such as this one.
