  • i made this same recipe just without the vinegar, and it DID NOT come out to 8 large cupcakes. It came out to 24 large cupcakes...

  • I own a bakery in downtown Riverside. I thought I would try a new recipe to make for my kids. I tried this recipe and they were absolutely terrible!! She says to put in a whole ounce of red food coloring, and I only put a half ounce and they were fire truck red! Big disappointment.

  • Do you know how often chefs wash and sanitize their hands? We do it all day long. And honestly.. if you really think about it, it's a lot safer than wearing gloves because they give a false sense of security. You think that because they're wearing gloves, there's no bacteria coming in contact with the food, when in fact they're touching so many different things and don't really think about it. So, if our hands are naked, we're more conscious of that and wash our hands probably every few minutes.

  • @utopiad4 So I guess you never eat pizza in restaurants, because the dough is made by hand. As is bread in some bakeries. You will be surprised how much chefs use their hands. They are perfectly clean.

  • thank u clairemarie231 from my experience it is always unsalted butter too but a few times i have seen chefs use salted for desserts i.e fondants so i just wanted to be sure......thanks for that now i know whick butter to use : )

  • This is the BEST recipie for red velvet cupcakets! I did add some additional cocoa, but other than that delicious! I also like more powdered sugar in my icing.

  • She fails! Haha, and a easy way to put the mix into the cupcake holders is to put the mis in a big ziplock type of bag then clip off a little of the corner and just squeeze it out. I've always done it that way and the come out perfect! :)

  • *TIP* Use Apple Cider Vinegar... Way better then white vinegar.. Plus it makes moist and sweeter :)

  • Ugh. Terrible cupcakes. Far too much oil and NO flavour. Had problems with the frosting as well.

    I'm not going to give up...I'm going to try the recipe from the first listed video...more cocoa powder and cider vinegar. Fingers crossed!

  • She says that they usually use a stand/commercial mixer, yet she tells you to be very gentle while mixing. If I am using a Hobart mixer, it cannot be very gentle. Maybe just advising not to overmix would be better advice.

  • I made these the other day and they came out very oily. I was very disappointed b/c I had to throw them away. They were so oily that the cupcake liners were soaked with oil on the bottom. I will not be making these cupcakes again using this recipe.

  • well oil is smoother to not make ur batter so heavy. u can use applesauce if wanted but to moisten up a cake an easier way is too add simple syrup or instant jello mix according to the flavor. for simple syrup: 1/3 cup water, boiled. once boiled, add 1/4 cup granulated sugar, and mix.

  • For the butter. Can I add the sugar to the butter to help with the creaming process instead of leaving it last.

  • Place butter into mixer and cream it.

    Once creamed then add cream cheese and cream that. Once everything is nicely incorporated then you can mix at a higher speed to whip it a little. Now slowly add the sifted powdered sugar. Once that is all in then add Vanilla extract.

    Once cupcakes have cold you can top with cream cheese frosting.

  • Cream Cheese Frosting

    1 pound of Cream Cheese room temperature

    1 cup of butter room temperature

    1 Teaspoon of Vanilla Extract

    4 cups of SIFTED Powdered Sugar

  • Mix all dry ingredients and sift into another bowl.

    Mix all liquid ingredients.

    Combine by folding in dry ingredients slowly.

    Pre heat the oven to 350º. 25- 30 minutes cook time.

  • 1.5 cups of vegetable oil

    1 cup of Buttermilk

    2 Large Eggs

    1 ounce of Red Food Coloring

    1 Teaspoon of Vanilla Extract

    1 Teaspoon of Distilled white Vinegar

  • Red Velvet Makes 8 normal size cupcakes or 16 small ones.

    2.5 cups of sifted flour

    1.5 cups of sugar

    1 Teaspoon of Baking Soda

    1 Teaspoon of Salt

    1 Teaspoon of Cocoa Powder

    Put one tablespoon of vinegar into a cup measure.

    Fill with milk to make one full cup

    Let this mixture sit for five minutes

    This is a standard well-known replacement for butter milk.

  • @pieman79 i usually use plain yogurt in the same amount. so 1 cup buttermilk = 1 cup yogurt. works just fine too.

  • no they're not the same..Baking soda is almost like a household product, it's used in toothpaste, air fresheners, and it's also used for baking so the cupcake will rise baking powder is different...i'm not sure why, google it :)

  • Indeed it is. The food color is just for the look. So if you add it or leave it out is totally up to your taste and will not change the cupcake (except for the color^^).

  • it's vital that u follow the recipe 100% across the board... including how to stir, how to mix in, etc. these things are very important and if not done correctly, certain ingredients will become more predominate and ruin the batch

  • no! it is not the same! cocoa powder is found in your baking section of the grocery store. it is unsweetened and tastes horrible by itself. it is used just for baking; hot cocoa is sweetened and has a bunch of additives.

  • Yup. This recipe is very common but it has so much more potential. It's is hardly anything to boast about without the cream cheese frosting :/ I actually did a cake with that recipe. It's not as tender and moist, and the chocolate flavor is too weak. It also lacks the richness of butter.
