can someone explain how an live techno performance happens? do the artists spend the whole time remixing their music or something?

Daft Punk is a special case. Usually DJs have two turntables and play one song, then mix the other in matched in beat. Sometimes they'll play two songs that complement each other over each other in what's called a mashup. Other times they'll play the vocals of one song over a different one. To "remix" songs they can use stutters, scratches, etc or adjust the high, mid, and low frequencies to make the songs sound different.

In Daft Punk's case, they have a sequencer so they don't have to worry about adjusting the tempo of the song to get them beatmatched. But instead of turntables, they have computers, various mixers, keyboards to trigger the songs, and samplers. They have all the parts of their songs broken down into vocals, beats, melodies and so on, so they can play any song over each other with no interference.

they actually have 4 Moog Voyager racks(mix tracks together) 2 Behringer BCR2000 controllers(used for ultimate control of virtual synths, samplers, effects and signal processors), and 2 Lemur controllers(a 12" touch-screen music controller). very basic for a DJ set but still DP rules.
