@MeMcNeills I don't know. Neither? Giants knocked out my Packers, and the Patriots are like the Yankees (i.e. I just can't root for them). Glad you caught the ST reference. Love that movie.
Great stuff. I did some dregs experiments recently on my channel. I love sour beers and want to experiment with more of these methods. Do you think adding some brett in the end for a few months would give the sourness more character? Or would the acidity be too high?
@arrogantbastardale Don't know about that. Not sure if the acid would inhibit the Brett. I don't see why adding Brett wouldn't do a little something though, assuming they did not die. In this case I was not trying to make a "funky" beer though, just sour a Wit a little. But yeah, in homebrewing there is no end to whatever experimenting you want to try. cheers.

Did that Lactic bottle say 88%? 10 ml of 88% solution then would be 8.8g Lactic acid per gallon
