Sushi is 30% technique and 70% product. If you have top of the line product, you're more than halfway towards great sushi. Unfortunately a lot of people screw up the 30% technique part by trying to do too much. Sushi is simplicity.
I just don't get sushi. I've eaten in australia and japan some sushi that was regarded as some of the best around and at the very best I can say is that it was pretty nice. I just don't get how this type of food is worthy of 3* when you compare what is involved with whats involved in pretty much any 3* restaurant in europe. Maybe Im missing something, and Id like to try 3* sushi but I just don't get how this food is considered equal to that of say a complete dish by Bernard Pacaud.

Yet there is no tight packing involved cause you dont want to crush the rice. It takes 30+ years to make real sushi

Michelin stars are overrated all together. That's like saying Green Day and Beyonce make the best music because they won a Grammy or the best movie of the year is the one that won an Oscar. Read the average review on this restaurant, I'm sure Michelin's opinion supersedes theirs because they own a tire factory i'm sure. If you don't like uni at the sushi restaurant, then a good restaurant will refund you the price, offer you some ginger to cleanse your palate, and offer you another choice. If you would try good Sushi with lower price. I recommend you to come smaller city, not Tokyo, Kyoto or Osaka
North, South, East, West, Pacific ocean and Sea of Japan, each place has his own fishes and special style of sushi.
I strongly recommend you some place facing to Sea of Japan, Nigata or Kanazawa... You can take excellent Sushi around $20.

@patriotdeologist how can a person of a different nationality make sushi that is dangerous to your health? Do Japanese people have special hands or something? The only thing is that Japanese people have had years of experience so the best sushi would be from Japan but saying that Koreans or Chinese people cannot make good and healthy sushi too is racist. I'm Japanese myself and I hate it when Japanese people think theyre the shit, thats why so many asian countries hate us.

@Shirokulo but the truth is over 80% of sushi bar all over the world are managed by Chinese and Korean and, they are selling crap. How could you find good Korean and Chinese managed sushi bar in Canada?

@KatiushaVN4 its usually more sanitary to not wear gloves and practice washing hands. gloves give an illusion of cleanliness. watch the kid in the back making your burger with gloves on...keeps his hands clean but your food covered in floor.

Michelin stars are overrated all together. That's like saying Green Day and Beyonce make the best music because they won a Grammy or the best movie of the year is the one that won an Oscar. Read the average review on this restaurant, I'm sure Michelin's opinion supersedes theirs because they own a tire factory i'm sure. Bourdain LOVES uni, durian, bone marrow all of which I find disgusting. Should I like it because he's on TV or because he was a mediocre chef at a mediocre restaurant in NYC?

@vicprobey First off fine dining isn't just about taste. It's about customer service as well. If you don't like uni at the sushi restaurant, then a good restaurant will refund you the price, offer you some ginger to cleanse your palate, and offer you another choice. This place is excellent because the quality of the sushi is unparalleled. A true remnant of a past era in Japan.
