Clay has nothing to do with cement. Ball clay is very plastic and that makes it easy to throw pots with it. Nearly all clay starts off white. Over thousands of years it becomes contaminated with iron oxide from the ground and this is what colours it red or brown or yellow. Iron oxide in the form of yellow ochre makes the clay a yellow colour. Both iron oxide and yellow ochre when fired in a kiln will give a terracotta colour like a flower pot or a house brick. The more iron the darker the color
Because I cannot see what you are doing I can only suggest that you make sure that you are using enough clay. Don't worry if the walls of the pot are fairly thick, try to go as high as you can while keeping the same thickness from the bottom to the top of the pot. It isn't magic it's just practice, keep at it and you will do it.
I'm having an awful time pulling my walls...I cannot seem to get anything over 3-5 inches...any advice on how to successfully pull to get a good height while maintaining the centering of the piece?
In most terracotta clays the iron is a red colour. The yellow clay has iron in the form of "yellow ochre" but it is still iron and fires to a normal terracotta colour
I suppose it's all relative. It depends on how much pottery you make, your market, where you sell, and many factors, really. But, as a general rule, no, you don't make a lot of money being a potter. But you can make enough to live on if you work hard.
I was originaly apprenticed as a preciision engineer where wobbles are definately not allowed. What you have been looking at is part of a two hour demonstration, unlike engineering the odd wobble is not important so don't worry about it. Regards. Alan

The clay is a mixture of a Dutch clay called Vingerling and a white ball clay from Dorset in England.
Vingerling looks yellow because it contains yellow ochre. I fire at 1160c and the colour is too dark a brown so I mix in the white ball clay to lighten it to a warm red colour.

watching someone throw pots over a wheel is really relaxing and hypnotical to watch. pottery is a great pass time and it relieves your stress.
