Get a good thermometer. You can buy one with actual numbers on it for $10. The drill a hole in the lid and mount the thing. I did that to mine because low/med/hi are no way to go by to BBQ.
As for chicken time, use a remote thermometer to keep track of the temp. Once your meat reaches the right temp pull it off, wrap it up and let it sit. :)
i removed the temp guage and use a regular temp guage. i got it at walmart and it fits perfect and is more accurate.

I have the same smoker. how do you control the the temperature? There is no damper?

The temperature is controlled by adding more charcoal.
Its usually a bit on the cool side so its not an issue.

how do you know the temp is 200?the gauge on it says low/med/hi

I managed to Co-op "K" into stoking the fire while I went out riding for a few hours...
With a little planning its possible..
The smoker was abandoned...you see this from time to time.
