  • the balance is bullshit. japanese knifes for example ARE MADE in the way that the balance point is not between the blade and grip, but more in the blade. if such a knife falls it will fall with the blade on the bottom.

    so, would somebody say japanese knifes are bad, because they have a "wrong" balance?

If your guiding hand's knuckles aren't in fairly constant contact with the flat of the blade when slicing, they run the risk of winding up under the knife.. especially when you freely draw the knife back quickly towards those waiting little fingers. Also, that would take like 10x as long than just chopping. How on earth this chick got the idea that this is good practice is beyond my feeble brain's capacity for understanding.

  • Appreciating the vid and the time required to make it but nah ah, that isn't how you use a knife. You're more likely to injure your wrist or stab yourself doing it that way. You cut with the heel of the knife, not the tip. And putting your finger on top doesn't do a thing but loosen your grip of the knife.

  • @NickyLess I assume you're talking about the "draw" motion. That is indeed an inappropriate way to use this kind of knife, but when cutting small fruits or vegetabels for instance, with a smaller, not so sharp knife, like a fruit knife, that's the way to go, and the finger does give you more control of the blade. Assuming you use the right kind of knife ofc.

  • Very nice video. The only contention I have is that a steel does not sharpen a knife, it hones the blade. The steel doesn't have the material properties to sharpen, as does a whet stone. The steel is a magnetized rod with ridges that will center the blade back to a more linear position, albeit giving the appearance of a sharp blade without actually sharpening it.

    I am a Chef and Master butcher and found your video to be very delightful and great for beginner cooks.

  • @ItsRobinWhoTalks A sharp knife is safer than a dull knife because with a sharp knife you dont havre to use as much pressure or force to cut your food. A dull knife has a larger tendency to slip while cutting. Say you are cutting an apple. A sharp blade will almost always cut through the flesh easily while a dull blade could slip and cause damage to yourself. Just remember 'Sharp is Safe, Dull is Dangerous'.

    - Also, you never put your finger on top of the knife. I prefer the pinch method. But

  • I think that you are confused whenever you are in the kitchen. First, what you call the chop, is called a mince. Second, strips are call juliannes. You chop extremely slow, speed up if you want to feed anyone before the next day. You never put a finger on top of the blade. You always grip it with the thumb of the right or left side of the BLADE, and your index finger goes on the other side of the BLADE. Also, some people have 7" Santoku's. It seems that yuo are trying to make cooking harder!

    Find a store via their website gfs (dot) com . I got a discount because my former employer has an business account with them and buys in bulk. Their consumer retail might be slightly higher, but not by much. If you cannot buy from GFS, look online. Don't buy kitchen supplies from a big box retailer.

  • How is a sharp knife safer than a non-sharp knife?

  • @ItsRobinWhoTalks A sharp knife requires less force to slice food. Because of this, the food is easier to cut and will be cut more cleanly. This is essential for things like onions, where the more precise the cut, the less juices will leak and the less you will cry. The reason that all of this is safer is because you are able to use the weight of the knife to do most of the work, you are less likely to have to force the knife down, possibly into a finger. It's all about control my friend
