the balance is bullshit. japanese knifes for example ARE MADE in the way that the balance point is not between the blade and grip, but more in the blade. if such a knife falls it will fall with the blade on the bottom.

Appreciating the vid and the time required to make it but nah ah, that isn't how you use a knife. You're more likely to injure your wrist or stab yourself doing it that way. You cut with the heel of the knife, not the tip. And putting your finger on top doesn't do a thing but loosen your grip of the knife.

That is indeed an inappropriate way to use this kind of knife, but when cutting small fruits or vegetabels for instance, with a smaller, not so sharp knife, like a fruit knife, that's the way to go, and the finger does give you more control of the blade. Assuming you use the right kind of knife ofc.

Very nice video. The only contention I have is that a steel does not sharpen a knife, it hones the blade. The steel doesn't have the material properties to sharpen, as does a whet stone. The steel is a magnetized rod with ridges that will center the blade back to a more linear position, albeit giving the appearance of a sharp blade without actually sharpening it.

Why is this lady doing videos on basic knife skills? I would be fired from my restaurant if I held my knife like that and cut like that. Find a store via their website gfs (dot) com . I got a discount because my former employer has an business account with them and buys in bulk. Their consumer retail might be slightly higher, but not by much. If you cannot buy from GFS, look online. Don't buy kitchen supplies from a big box retailer.

@ItsRobinWhoTalks A sharp knife requires less force to slice food. Because of this, the food is easier to cut and will be cut more cleanly. This is essential for things like onions, where the more precise the cut, the less juices will leak and the less you will cry. The reason that all of this is safer is because you are able to use the weight of the knife to do most of the work, you are less likely to have to force the knife down, possibly into a finger. It's all about control my friend

Why is this lady doing videos on basic knife skills? I would be fired from my restaurant if I held my knife like that and cut like that. Not to mention that I'd lose my fingers with that kind of grip. Worst of all, that steel hones the knife--it doesn't sharpen it. She's holding it at too far of an angle.

Also my goto blade is a 10 inch knife that costs $30. I've used if for hour long cutting sessions daily. You don't need to splurge on a $90 Wustof Culinar unless your money is burning a hole in your wallet.

@sunnyelaine999 My "primary" knife is the 10' Chef Knife from GFS. Product code 606618. Cost me $30. Used for 3 hour long prep sessions daily, 6 days a week, it had to be sharpened once a month.
Find a store via their website gfs (dot) com . I got a discount because my former employer has an business account with them and buys in bulk. Their consumer retail might be slightly higher, but not by much. If you cannot buy from GFS, look online. Don't buy kitchen supplies from a big box retailer.

@ItsRobinWhoTalks A sharp knife requires less force to slice food. Because of this, the food is easier to cut and will be cut more cleanly. This is essential for things like onions, where the more precise the cut, the less juices will leak and the less you will cry. The reason that all of this is safer is because you are able to use the weight of the knife to do most of the work, you are less likely to have to force the knife down, possibly into a finger. It's all about control my friend

this might sound stupid but if you don't wanna cut your fingers don't put them under the knife and while she's holding that knife that high there's a lot of possibilities that she's gonna cut herself...
A knife should never be higher than 2/3 of your fingers length(from the tip)
