Yes, I wondered that too. When I see live or videos of accordeon players that's the first thing I notice: if they are playing with both hands. I've asked a few of them, they usually say the other musicians are playing the rhythm chords and bass notes so they don't need to play the left hand side. It's a shame really. As well, it's hard to play when an audience is clapping along, as some of them lack rhythm.
