It is possible to have move units then your supply allowed. If I have a supply for 200 units

and reach that limit and the opponent destroy one or more of my supplies my units wont die but I cannot build anymore until either I build new supplies or enough units die to get the count too green again.

Right. But not above 200 in any case and for any race. You can have twice or thrice 200 supply with protoss if you mind control other races units or workers and start it up.
