i am sure it tastes good, but thats not thai curry ! i have been to thailand over 6 times and stayed at great lengths and eaten many curries, you have some ingredients there that are not in a curry, and the texture looks way off, but keep practising. my curries look a lot different
I agree that its different from what thai people would normally cook it but its not wrong. Its whatever...when i'm lazy, I make quick curry like that as well. any other day that i'm willing to stay in the kitchen for about 3 hours, I'd make it the thai way. Great video though! should've zoomed in towards the end to show your pot, though!

Normally, in our red curry we don't use carrot, onion, bell peppers...we stir fry the red curry paste before adding coconut milk (only creamy part...the thinner part is added later)....and the list is going on and on

So do the white onions want to be just cooked but a little aldente? I've noticed one of the things I love in Thai cooking is how little the onions are cooked. It makes everything so flavorful to have crunchy spicy barely cooked onion in my food.

1 can coconut milk
1 tbsp red curry paste
4 cloves minced garlic
1 tbsp brown sugar
1-2 tbsp fish sauce

1.Dissolve the red curry paste into one can coconut milk in a large saucepan over medium heat.
2.Once dissolved, add the garlic, brown sugar, fish sauce, ½ cup water.
3.Add chicken, bell peppers, carrot and potato; season with salt & pepper and cook for 5 mins.
4.Then add the mushrooms, onions, and green onions and then twist a sprig of basil and cilantro into the saucepan and cook for an additional 5 mins.
5.When everything is cooked thoroughly, serve with steamed rice and enjoy.
