  • Has anyone else noticed that Amylopectins make rice sticky, like a jam, which incidentally, contains lots of fruit pectin? Coincidence? I think not!

  • ZEPPELIN!!!

  • that tomato thing with the grater was really neat! I never would have thought of that!!

  • i loves this show ^.^

  • Thank you so much for posting this! I'm a big fan of Alton Brown but I don't always have a chance to see him on tv

  • at @10:39 when alton opened that book, i thought its was stashed drugs LOL

  • While he was chopping, he looked like the guy from the meat pie episode.

  • The music is very (very) flat. Did they do that on purpose, or was the audio damaged?

  • @wanderingivie His voice sounds a bit lower too, I'd wager the video is running slightly slower than it was recorded.

  • Haha... he's got copies of the Good Eats book on the shelves hiding all sorts of stuff :P

  • and I know... BECAUSE I WAS THERE

  • When I saw the rice grain model all I could think about was "I wonder how much all those straws cost..." xD

  • my paella came with a lid.

  • Very annoying: pitch varieties in audio. False. My musical ears hurt. This is what it takes sometimes to be an AB fan, of course... ;-)

  • he lost some weight

  • haha...he said "Adhesing" I love this guy.

  • LOL hiding the safron in his own book! LOL

  • 3:10 Alton... you just didn't feed us the same BS about how Islam was better than Christians.. I'm deeply hurt...

  • @MonfangHowlett You have the Arab peoples to thank for math, preservation of philosophical work, and such and so forth. Don't knock it.

  • @khesed You talking about the mathematics they got when the invaded India? The only preservation they did was of the things they stole from the peoples they subjugated. Get your history right.

  • @khesed B.S. The Arabs invaded other people, took over their inventions, and slowly strangled them due to the many horrible aspects of ISLAM.

  • @thowdy Ditch the racism.

  • @khesed I didn't mean to be racist, I did, however, meant to be an Islamophobe. Your comment concerning the wonderful contributions of the arab/muslim people is pc crap, tho.

  • @thowdy Islamophobia is hardly different than racism & I see your definition of pc crap includes universally acknowledged history. I'm going to be a jackass, too, by assuming you're coming from a Christian culture and reminding you that "invad[ing] other people" & etc is something of a hallmark of Christian history. Those in glass houses shouldn't throw stones. Every group in the world is guilty of a multitude of sins. Don't go acting high & mighty; you've nothing holding you up.

  • @chibiyumeusa Islam is an ideology with a religious content. It isn't a race. I suppose if I was venting about communism I would be a racist too because a lot of Chinese or Cubans are/were communist? Islam is a dangerous ideology and its contributions to civilization are grossly exaggerated, notwithstanding "universally acknowledged history."

  • @thowdy "Islam is a dangerous ideology"

    *salutes* spread the word!

Incidentally, are you related to Captain Howdy?

  • @chibiyumeusa It is not the multitude of sins which Islam is guilty of which makes the idealogy dangerous.

The dangerous part is the fundemental precept within Islam that there are two types of governments: Those sanctioned by Allah, and those which are not. Those governments sanctioned by Allah will one day cover the entire world, and in the meantime it is the righteous duty of those who submit to Allah to make this a physical reality, through preaching, or if necessary, jihad. -cont

  • @Zidana123 I don't know if most people realize that Islam calls for the physical, forceful (if necessary) conquest of the world. Those (usually leftists) who defend Islam do so because they witlessly believe they are defending a minority without realizing that moslems are the majority in some truly illiberal and awful regimes in other parts of the world. And the moslem is duty bound to spread that intolerance throughout the world.

But I love AB's take on paella, its delicious.

  • @thowdy Clearly they don't understand. It's not something I understood either until I read the Quran a few years back. It's an aspect of Islam that people don't want to talk about because it destroys the PC notion that all religions are essentially peaceful. I think more people need to read the Quran and arrive at an understanding of Islam's core idealogy, its history, and how the religion was formed before trying to argue that it's not dangerous to non-Muslims.

    Saffron is so expensive! D:

  • @Zidana123 I made mine without saffron, it was pretty good, although I guess it wasn't a "real" paella. I didn't want to waste my money on saffron until I felt I could make the dish successfully.

  • @thowdy I don't have the hardware to even begin to attempt this dish in its authentic form, lol... got no paella, so I'm just gonna go with a skillet. Although as long as I'm bastardizing the recipe, I wonder... can I just dump the rice, vegges, and chicken in a crockpot for the final simmering phase? I'm not gonna be able to generate a bottom of the pain crust that way but it seems like it would reduce the 'this patch of rice is still hardened' issue.

  • @Zidana123 the pan is pretty cheap, $20, maybe. But I think the grill is a necessity, fortunately I have a Big Green Egg which is perfect for a paella. I think what you would do with a crock pot and a skillet would achieve a 90% solution which would satisfy anyone as long as they were't from Spain or paella snobs. My problem (or maybe its a blessing) is that I've never had proper paella so I don't know exactly what it is supposed to taste like. All I know is that what I made was good.

  • @chibiyumeusa It is not the multitude of sins which Islam is guilty of which makes the idealogy dangerous.

The dangerous part is the fundemental precept within Islam that there are two types of governments: Those sanctioned by Allah, and those which are not. • "...7" bigger than the gong John Bonham womped on during Zeppelin's '77 tour, and I know, because I was there!" GOLDEN. Hahaha!! I <3 AB. :)

  • ALton is a Zeplin fan..>AWESOOOOOME

  • He's pronouncing the Spanish word "dulce" like the Italian way. C in Spanish doesn't make the CH sound like it does in Italian, unless you actually add the H after the C which is entirely a whole different letter in the Spanish alphabet.

  • When I was in Argentina I helped make something called 'Pollo al Disco'. The paella was called a disco. It was awesome.

  • love the music :D

  • There was a little bit of Stevie Wonder's "Superstition" at 10:13.

  • YAY JOHN BONHAM!!!!

  • 8:33

    HAHAHAHAHA.

    I love Good Eats.

  • 3:05 What does he say?? The "Transcribe Audio" is worthless as its wrong 90% of the time.

    I had having bad hearing.....

  • @gumbyx84 "I thought so. Well, eventually Christian armies hoping to spread the smelly medieval-ism of the dark ages over Spain's, uh, culture of science, education, art, and enlightenment, uh, random wars slapped 'em out of town. But the rice culture and the Paella remain. Now, let's talk about that rice for a second." Hope that helps! Sorry for the late reply. :/

  • @rockerkelly93 No problem. Thanks for the transcription. :)

  • @rockerkelly93 Actually could make some of it out this time. :)

Its "the Mores" not "random wars". Not being ungrateful, but clarifying. :)

  • @gumbyx84 no, it's definitely "random wars" He's saying that a bunch of wars just drove them out.

  • @rockerkelly93 : shrugs: I hear "Mores" but then again my hearing isn't great. :)

  • @gumbyx84 Yep it's moores, he says "ran the moores right smack out of town".

  • 1:41 O_O Is it me or does the theme song sounds off key and/or slowed down? Sounds horrible. :(

  • the music sounds weird, like the Italian music sounded distorted, along with the intro music

  • @supsup195 thats just the way they did it...I guess

  • Comment removed

  • @GoodETV No, the audio must be off. Every musical snippit in this episode is off. *has perfect pitch, and is a musician* :P It must have distorted while you were transferring it onto your computer.

  • @I4mfr34ky Maybe they tweaked it for this ep. to give it a Moorish "Flavor".

  • @trumbachd1 That what I thought at first, but they would have added some ethnic instruments as well, like they normally do. Also, tweaking it would be smart, but they're changing between two keys, and it's not pleasing to the ears. That's what makes me think this file is distorted.

  • Oh No, I have the Paella Joke from Seinfeld stuck in my head xD

  • @BlackWolfessUSCM HAHA I know how you feel
