Hi Darlene hope your new year is going well so far. I'm now a proud citizen of Vancouver & I start cooking school in two months now!
My mom used to make pizza with macaroni and cheese as the "crust" and then Ragu sauce as the filling, with cheese on top and maybe some leftover meat and bake it in the oven. I still love it today. It was so simple but she made everything for us with so much love, sometimes the humblest food is the best huh? It warms my heart just to think about it.

That mac and cheese pizza your Mom made sounds yummy. A great kid pleaser. Something to do with left-overs. I rasied five kids and you can't afford to waste anything. @Elvis66 This dish is made from leftover ingredients, therefore the amounts vary. I'd say it would be pretty impossible to have 'the right size pan' on hand each time the recipe was put together.
What's for dinner Mom ? Spagetti Pie. OK, but I am not eating any more of that spagetti this week ! I'm sick of it! hahahaha. Sorry. Just being silly. Your recipe does sound great for leftovers Darlene. When we were kids we were poorer than dirt & once a wk our mom overcooked macaroni noodles then dumped on a can of stewed tomatoes...no cheese, no meat...nada..just the goopy macaroni & tomatoes & THAT was moms best dish ! Honestly ! So this pie of yours is truly decadent compared. Hugs !
@mukwah1111 Thank you. Your Mom made what she had when the money was low. A friends mother use to take macaroni, butter and a can of cream of mushroom soup and that was dinner. I liked it. My kids did not. Darlene
@DownHomeCooking I agree, I think most of us have had our family's version of what my kids came to term "poor people food", and wouldn't you know it, it became some of our very favorites! My grandma could feed 8 or 10 people some delicious Pasta Fajole with just a bag of dried beans, a pound of pasta, some bacon grease and a few cloves of garlic.
