Sokka has never shown any romantic interest in Toph (even though she has him); the girl he ended up with was Suki, who was his main romantic interest after Yue became the moon spirit. Seeing as there isn't some corny, secret-love Sokka has for Toph; it is likely that if his favourite colour is an actual reference to his love interest, it would be Suki, his love interest. Sokka never gets with Toph anyway and it's been confirmed he never does.
