because the figured no one would notice, and because they could do the animation more visibly. Also, if they only show one side of the weapon in-game, then the other side doesn't need to be modeled or textured, which ultimately means they can invest more detail in the surrounding world for the same frames per second. Seeing as how these guns are many thousand polygons, a potential 30% reduction in the detail of the first person model opens up a lot of things they can do.
