Of course you do hear the bass. The keyboardist plays the notes on the keys with his left hand. It's a common "technique" in jazz groups (especially with a Hammond) without a real bass.
I've noticed his intonation is a bit out sometimes. That's my only reservation with his playing from time to time. He's absolutely smokin' on every other level though!

So, say you're blowing over a tune and you come to a dominant, and for the sake of this, it just resolves to Imaj7. We're going to be in the people's key of C. So, G7 (The V7 of I) is going to have a few possibilities for substitutions. The most common substitution being the Tritone. If you play a Db7 over that G7, the V7 is no longer V, but a subV7, which resolves by half-step, not a fifth.
It doesn't matter if it's lower case if it isn't classical analyzation. Analyzing modern tunes, the lower case becomes extraneous, since the chord quality is included. IImin7, for example.
But to answer your question, no. I did not, in fact, mean ii-V.
Not really. If you are referring to ii and you refer to it as II, that can confuse some people. And were you referring to a II as in II-V-I because it is correct as ii-V7-I. And plus a lot of books that have Roman numeral references go between upper- and lower case Roman numerals.
Instead of a Tritone, you can also sub the V7(G in this case) with Eb7 and Bb7. All these are just built off the tension of the V7. Those are not the only substitutions... just the three most common.
Also, while playing over any chord, using the root as other parts of different chords is a good way to play out. For example, if playing in C (yes, again, haha) You can make C the third, fifth, seventh, ninth, eleventh, or thirteenth. So, if you were to make it the major third, you'd play an Abmaj7
Thanks for the lecture. Sorry I didn't see the above comment when I was asking about playing out so I didn't understand the context. I enjoyed hearing about other types of substitution also. Up until this point I only knew about tritone sub so It's good to add some stuff to my musical knowledge bank. Why is it though that you can sub the dominant with an Eb7 or Bb7 (of course if you can't be bothered explaining then that's cool. It is a bit laborious I can understand ;)?

I think he intentionally plays out sometimes. It is a way of adding more tension in his playing just like in Hindustani music.
