  • YOU MUST TRY "PUERCO PIBIL". Search You Tube for Robert Rodriguez's 10 Minute Cooking School. It uses achiote and is INCREDIBLE. I've always heard they dyed Cheddar because it made it look like gold. Furthermore, I have had some 2 year old English Cheddar that was still white.

  • Annanto seeds make a beautiful color when pan roasted with some olive oil, set it aside let it cool and use for a basis for a delicious salad vinaigrette!!

  • I love you. I've never been able to reproduce the simple, delicious rice found at almost all taquerias and this certainly looks similar. I'll have to make this since I'm homesick for San Francisco taquerias.

    Do you buy annatto whole and take the nuts out yourself or do you buy just the nuts? Seems like I've seen a whole annatto in our local Asian market...but I could be wrong...

  • @aglanceatmyworld I bought the ground up kind, but that's because I had the availability to call of them. If you get the seeds you can grind them in a spice grinder.

  • Mexicans also use it to color authentic cocoa drinks.
