For starters scientific theories rarely change as they are backed by immense amounts of evidence, that why they get to be called theories. Secondly, every idea in science is subject to change. Science is the search for knowledge based on observation. Our ideas are only as good as the tests we develop. The part you are missing is that these ideas have help to years(centuries in some cases) of scientists trying to disprove them.

Evolution - accumulated changes in heritable (genetic) traits in populations over time - also gave us certain crops.
Corn was evolved, through artificial selection, from teosente.
Cabbage, brussels sprouts, cauliflower, kale, broccoli, and kohlrabi were all evolved, through artificial seleciton, from wild mustard.

DNA, looks like you missed the point of the video. You look at the small stuff. The point of the vid is that abiogenesis is impossible. If someone is (1) arguing against the scientific consensus of "evolution", (2) shows he's ignorant of the science, & (3) says something about billions of years being a tired old excuse, then it is likely that that person will be considered a YEC (if it walks like a YEC, and talks like a YEC ...)
