this looks absolutely delicious and i definitely will be trying it out.

but i noticed that you said all the alcohol cooks off. that's actually not true. even if you only simmer it for 15 minutes, about 40% of the alcohol remains. just thought you'd like to know! :)

I've heard that vodka is excellent for cooking because it releases the flavors of the ingredients without adding much of the spirit's flavors. But on the other hand, maybe Sobieski's vodka is especially tasty. I'd love to hear from vodka drinkers if they have tried Sobieski's. I only have the cheap stuff and use it mostly for cleaning (instead of using rubbing alcohol).
