  • I've had one for 2 yrs and couldn't go back to electric or gas. Only one thing to be careful about: superheating. Water and other clear liquids boil super-fast, and can reach boiling point without bubbling. Anything carelessly dropped into the water can make boil all of a sudden, spilling scalding water all over. Dangerous and messy.

  • Induction heating is music to my ears! I've had an induction cooktop for the last two years and I couldn't go back to electric or gas cooking. Only one caveat: beware of superheated water. Anything carelessly dropped into liquid that should have boiled but hasn't, has the potential to suddenly boil and spill out of the vessel.

    I like to make large batches of food, but don't have space for a full-sized cooktop.
