Yeah the ones that service a lot of the highest end restaurants are not cruel at all, some of them aren't even force fed since Ducks/geese naturally fatten their liver up before/during the winter months. i would be willing to bet that the foie gras in this video was humanely raised as that is a well known high end restaurant. Humanely raised foie gras tastes better. period. cheap crap is what you saw like chicken/beef from the supermarket

  • @tantibogusboy - although i too watched the dan barber video i would argue that you are incorrect. most of the major foie gras producing comapnies still practice some form of gavage when attempting to produce foie gras. it is less than 10% of the foie gras production that is actually "humane" and less than 1% can claim to not use gavage feeding at all and also have completely free range birds. I was inspired by that video a great deal but we still as culinarians cannot overlook how we get it.

  • @natija08 they force feed them buy putting a round-edged tube in the throat (they have incredibly thick lining in the throat, they swallow fish and shit whole for christ sake) the process is quick and painless, their windpipes begin at the hole in there tongue so they can still breath (not to mention it takes about five seconds). If the ducks and geese were unhappy, stressed, or unhealthy it would make some terrible foie gras. Any animal product can be a cruel process when done improperly.

    Geese are birds who don't swallow fish. They eat grass and other plants.

    Ducks eat plants, small crayfish and insects. Only a small group of ducks swallow fish. Perhaps you mixed it up with cormorants?

    Foie gras is a fatty liver. It's a deadly disease and many ducks die before they are slaughtered.

    I was a vegetarian for more than twenty years and for nearly two years I eat only plants and their products.

    The chicken and all the other animals in "modern" farms are treated very bad! You are right in this point.

    But it cannot be the reason to treat ducks and geese worth!

    In many countries it's forbidden to force-feed animals. If you were right it would be allowed everywhere.

    By eating foie gras you support terrible cruelty to animals.

  • @natija08 YUP, they stick the duck or goose under a machine that pipes the food in. Takes 2-3 seconds. It is a certain technique that is regulated in France and is specifically done a certain way. In other countries, they just feed the animal a VERY rich diet. Tastes wonderful if prepared well.

    If you want to go onto a long journey you have to do the first step. This step can be to forbid the force-feeding of animals because force-feeding is one of the most cruel ways to treat an animal (perhaps except of animal testing which is often worse for the animals).

  • Just because Quebec treat their duck/geese inhumanely, does not mean every other producer does so. The treatment of duck/geese in Spain for example are treated very humanely.

  • Actually ducks/geese are gluttonous animals. they don't mind gavage. When raising ducks for the purpose of foie gras you have to monitor their eating habits because they will gorge everything they find.

  • Actually I've seen first-hand the technique at Hudson Valley Foie Gras and I believe it's wrong to force feed. That is why I buy foie gras from the french producer Rougie Foie Gras. I also know Benoit Cuchet, the president of the company, so I get lots of free samples of the best =). I believe that the more you let an animal live its life humanely the better the product.
