  • Hi aunty, one more doubt: Is there any particular reason for you to say that 2% milk is better than whole milk, for making rasgullas? In my understanding whole milk has more fat. So won't using whole milk give more paneer content? This is just for my understanding, aunty. Really would appreciate your response. Thank you.

    I am a bit confused with the recipe of chum chum and rasgulla.

    please help me out.

    If I am cooking rasgulla in a cooker, then how many whistles should i be hearing and on what flame?

    also, if i am not using cooker for rasgullas, and cooking it in a pan, then according to chum chum recipe, i will use 5 + extra half cup water and let it cook for how many minutes in pan?

  • Thank you for sharing this wonderful recipe, aunty. I tried this for the first time with a lot of fear and anxiety. But it came out really good and very soft. But I think it should come little more round in shape, some of them were a bit flat in shape. 3 questions aunty: Can I prepare the rasgullas on the previous day of the party and refrigerate it? Will doing so reduce the softness of the rasgullas? How many days can we keep rasgullas refrigerated without losing the softness and the texture?

  • I do not have a pressure cooker and I am taking your advise by adding 1/2 a cup more water but should I cook the Rasgulla for 7 minutes or 15 minutes?

  • Thanks so much for the recipe! I followed these steps, but did not use a pressure cooker. I cooked them in a normal pot for 15 minutes. The rasgullas were soft right after cooking, but after a few hours they became really hard. Any idea on what might went wrong?

  • @malihasultana If you do not have pressure cooker use the recipe for chum chum and add 1/2 cup more water in syrup.

  • MajulaaJee, you are a great cook. One bengali tips that I learnt from my grandmom. She always put nakuldana inside the balls. It makes rasgullas much better. Nakuldanas are very small balls of sugar. I am not sure they are available outside bengal or not.

  • So you're basically making cheese? Do you need a pressure cooker? What if I did these using only a regular lid, would the results be a lot different?

  • @PutBoy If you do not have pressure cooker follow the recipe for chum chum and add half a cup of more water for syrup.

  • @rvkrsc It doesn't matter. Sometimes they're cream, no big deal. I mean, I'm no chef, but being in India I've eaten all kinds of rasgullas. Just my 2 cents. :)

    I think paneer was too dry, you used too much lemon juice to make the paneer or too much water was squeezed from paneer.

  • perfect :o) ... 1st time preparing rasagulla and it turned perfect tasty one .. Yummy !!! tips to make smooth paneer: Use Chapathi stone and stick and have small amount of paneer and roll... it will become so smooth and transfer to vessel... continue with the rest of them, later knead all together and start making small balls... When I opened the cooker, I was expecting few or more balls broken.. but I was shocked to see everything was perfect... tasty...

    By the way I made rasgullas today...they were good....they were flattened...

    And they were not as spongy as the rasgullas we ate in India...

    Do you have any suggestions ? Some recipes say that using baking powder is a good idea.....

  • Hi Aunty. I made the rasgulla as per your recipe but they did not puff like yours. They were soft but didnot puffed. It was only 20-30% increase in the size. I gave 2 whistles as you did. Please suggest.

  • Hello Manjula Didi, Today I made Rusgulla's and they turned out just like the ones I bought from a local methai shop, the only difference was it was not too sweet, just the way I like it.

  • @abohoman you knead the paneer more and yes can cook them in a pan should cooke for about 25 minutes over medium heat.

  • Tried rasgulla's for the first time and came out perfect. Great and simple recipe. I used vinegar instead of lemon juice and made small balls to avoid getting an undercooked ball inside.

    May be you used too much lemon juice to make paneer and that can dry the paneer.

  • Hi Aunty, I am from Puerto Rico and love Indian food. There are not many indian restaurants here at all. I followed step by step but my rasgullas did not double in size and are round. Yours seem flat after you pressure cook it. They did not come out spongy either. What am i doing wrong?
