  • if you plan on doubling the recipe and having the soup for a week. Is it better to cook the tortellini separate? and just add it into the soup when I'm ready to eat or have it sit in the soup for a week?

  • what is the difference between tomato paste and tomato concetrate?

    If my memory serves me right, Paste is a thick, well, paste of tomato which is pretty much PURE tomato. The concentrate is a reduced tomato puree, I believe.

    Well, I guess they are pretty close but paste is stronger than concentrate and has a nicer tomato flavor for such a small amount and it comes in a tube.

  • @kekejojo1212 You do taste them...it's a subtle, "I'm not sure what that is, but I like it", flavor. It's an enhancing ingredient.

  • Way darn over cooked tortellini. Tortellini doesn't take more than two mins to cook, should have added the beans first, then the tortellini, almost at the end..

  • @KayosQuinn fresh tortellini takes 2 mins.... dry tortellini 15 mins! and tortellini are not meant to be cooked with beans!!!

  • Hi Chef John. I was wondering what your opinion would be on adding some finely diced onion(white I guess, standard onion) and some finely diced celery? I have a hard time NOT adding those two to soups, and I was wondering if you think it might compliment the taste and texture of this recipe? Thanks!

  • Thank you. Delicious, quick, easy, and cheap. I've made quite a few variations, and here's my best:

    Sautee some onion and finely chopped celery. Add the anchovy and tomato paste along with a little bacon. If you want to add more meat, stir in a chopped herb sausage. Throw in some chopped mushrooms and a finely sliced clove of garlic for ~30 seconds, and add BEEF stock instead of chicken. Borlotti beans have a lovely earthy flavour. When ready to serve, add a small spoonful of sour cream on top.

  • I love the way you say "creamy and delicious".

  • My boyfriend and I couldn't decide what to make for dinner, and came across this recipe. We had to improvise, as the only chicken broth I have is not 'hearty', so to add some extra flavor, I made kind of a creamy pesto sauce, which was thinned to soup consistency by the chicken broth, and it was AMAZING! Next time I make it, I'll make sure to have the thicker broth at hand to try it the way you meant for it to be :) It's also incredibly filling! Fed my whole family of 5 :)

  • Hi Chef John! I have recently discovered that swiss chard is a great green to add to this soup. Its really easy to grow so I always have a supply from my garden. Do you have a garden?

  • Wow! I made this soup tonight; it's the first actual soup I've ever made. It was AMAZING!!! Didn't use anchovies, used vegetable broth and instead of parmesan I used harvati. I added a little too much salt but it was incredible nonetheless. Give yourself a treat and buy the GOOD tortellini, that really makes a difference. ;)

  • everybody in this house is either getting sick, or getting over being sick so this soup looks damn good... although I'm not sure about the anchovies, but I should start being such a wuss when it comes to foods and just try everything at least once to know if I actually like it or not instead of saying that I don't like something because it sounds weird or gross to me, especially since I want to be a chef myself.

  • @himynameishelen I just finished it; I couldn't find tortellini at the store, so used fusili, it was still amazingly good, and I can't wait to try it how you made it; I think if I make it again some crusty bread could also go really well with it, even though it's so hearty and filling it might be a too much food!

  • LOL it IS bullshit. I spend my Sundays cooking up all my lunches/dinners for the week. Takes me a few wonderful hours, but I find it a really relaxing and lovely way to end the weekend. Then I pop all my food in tupperwares and into the freezer they go! I love how you added spinach to this soup, gives it a beautiful colour.

  • @fannysmack This is so true! I just wish I had the ability to be as organized as you when it comes to making meals ahead of time! I think a lot of people would eat at home more often if they had just been prepared to make (or reheat a previously made) meal.

  • I've always found it funny you use the word "fazool". In Italian, beans is "fagioli", and probalby fazool comes from the word "fasul" which means beans in the Naples dialect.

  • Thanks, that really looks like a perfect soup recipe as the weather gets cold, and you need something warm and nutritoius to re-energize with........and enjoy. I just happen to be using alot of baby spinach in simular ways with pasta right now, but I didn't know the anchoives bit for flavour, or actually forgot about it! ( i have seen it used elsewhere in recipes, perhaps not soup.)
