  • Unless that steel was diamond impregnated (and most viewer's will not be), it will not sharpen a knife, it will only hone it. Teaching people to scrape their knife against a steel like that is a waste of time and may damage the knife. A steel, unless it is made of a material harder than the knife like ceramic or diamond, is only used to hone, or straighten, a blade after it has been properly sharpened.

  • One thing I've never understood about that dice technique (cuts along 3 planes) - the onion is in horizontal layers already so why do you need the horizontal cuts?! Vertical slices then perpendicular horizontal slices gives you a good dice as is.

  • I did find it interesting how he did not cut through the back of the onion when dicing it. Will definitely try that tonight, I usually just cut right through and end up having to reposition the onion together while dicing.

  • When dicing the onion he slices through it towards the back with his hand in front. Not only is this dangerous, one slip and you cut your hand, but totally unnecessary. Simply chop in half. Slice through almost to the end following the lines and then slice through length ways. The other cut he tried to add is done automatically as it's created by the layers of skin on the onion.

  • One second he's cut off the ends and the next he already has the onion sliced in half. Then everything goes blurry. Is this a joke?

    Though he should've started with the basics, slicing onion rings. No cutting in half to peel, just peel and chop.Then add to any kind of meat cooking.

  • Assuming that this video was to educate and advise people who do not know how to slice and dice vegetables, the part where he cut lateral lines toward his hand with what should be a very sharp knife was idiotic in the basest sense . I would fire any one of my staff on the spot if I saw them using that technique.

My parting comment on the matter is that if you can't use common sense and see the dangers involved with using that technique then I am only glad that I won't be in that kitchen or galley when the inevitable happens.

  • yes he is right you do need the horizontal cuts 2 is enough, otherwise your dice wont be trully square, and to do this with a sharp knife is a joy.

  • To dice, you don't need to do those horizontal cuts, the layers of the onion already do that for you.

  • For a true dice you do, otherwise you get the rounding of the onion on your dice

  • @texan1510 Cutting the onion quickly is the key.. when the onion is cut, a chemical reaction releases a little irritant gas that gets into your eyes. Cutting quickly with a very sharp knife reduces the amount of gas released. You can also try slightly cooling the onions before cutting, which helps slow the reaction as well.

    Anyway, regarding the cutting...I always skip the step where he cuts it horizontally since the onion is already layered in that direction.
