  • This is a horrible video/recipe. I tried making the cannoli's word for word from him and the shells AND the filling were a disaster. Clearly your doing something different or not showing everything. FAILL mario.

  • I watched this as a kid years ago before I even got into cooking. At that time mario was just another guy that could cook. Now I'm watching it and realizing that it is THE Mario Batali on foodnetwork. wowzers.

  • Why would someone take the time to experiment all day long if they have the base estimates of ingredients. Even the best chefs in the world uses measurements. Its very important to get the right balance, instead of getting different taste every time.

    I do agree that its important to experiment to learn. But i recommend that ppl first get the base recipe then add their own twist to it ;) This rule is especially important when it comes to bakery, since the ingredients must work in balance.

  • That's because he wants you to understand how to make the dish as opposed to just knowing how to make it.

    Basically it's up to you. Do you want more ricotta flavor? More chocolate? More orange? Play around with the amounts and see what fits your palette best.

    Like Marco Pierre White said, always question why you're doing what you're doing. Knowing how to cook food is important, sure, but understanding why you're doing the processes for it is even more important.

  • He wouldn't throw too much of something because he understands the creation of the filling. He knows how much to put just by looking at it. Trust me, if you tried to measure everything precisely in a busy kitchen, you'd never make it into the business.

    Also, it's not wasted time. Italian food is about the ingredients. Italian cuisine is as simple as simple can be. It's not about over the top, incredibly complex combinations but rather showcasing the quality of the ingredients used.

  • And if you're talking about yourself in the throwing in too much part, then just don't. Ever heard of the saying "slow and steady wins the race"?

    Combine them little by little and keep tasting it. Taste taste taste, that's what Raymond Blanc always said. Get your hands into the food and understand it instead of just knowing it. Mix your ingredients little by little and taste it until that light bulb in your head lights up, then you'll know when to stop.

  • If someone doesnt know how much of anything to put into something this could take days! You cannot be serious. I know Italian food,everything has its limits. A pinch of this, about a cup of this.. you dont just say experiment and after cooking it if it tastes funny try it again. You'd waste hundreds of dollars worth of food. There is at least an estimate on ingredients and each person and family makes it unique by then putting less or more of something in particular.

    And who the hell makes a new recipe without testing it first? Also, maybe you should open your eyes and look at the amounts that he puts in the bowl and base it off of that.

    You say you know Italian food, but you obviously don't have an understanding of food, and this is why you're asking for estimates.

  • Ok so youre telling me when someone wants to learn how to make something, they should start out by putting a table spoon of everything until it tastes right? Cmon, seriously? No.. I dont get it because there are a million other videos like this and none of them inform without giving estimates on approximate amounts of each ingredient. After mixing what is given, then you add a little of whatever you desire, but you dont start out with a damn cup of ricotta and work your way up from there.

  • Like I said, you should look at how much he has. If you ask me, it does look like a cup of ricotta, maybe a cup and a half, after all, it's a ricotta filling. He emphasized on intensifying the ricotta flavor by letting the excess liquid drain, so obviously the ricotta is the main flavor and therefore it has the most amount in it.

    Chocolate chips, looks like a quarter to half a cup, orange peel seems like an 8th of a cup to a quarter of a cup. The sugar is up to you, not that hard to guess that.

  • And as for judging by what is shown, if that's the case then why the hell cant he say how much of everything he has?!? Thats my point... when people watch these videos, they say okay, this is how much THEY put, but you know what, I dont like it so I'll add a little of this and take away a little of that. I do have an understanding of food and I get what you are saying because I agree in the sense that testing and experimenting should be done but only after you are given estimates.. Not before.

  • Add the drained ricotta, sugar and vanilla and then blend it well. Use a blender, food processor or whatever you use make sure it's creamy smooth. Then add your other ingredients like choc. chips etc. If you don't blend that well it will come out gritty and not taste very good at all, it really makes every difference in the world. Have no idea why big Mario did not blend his ricotta filling first.
