Heres how to get 3 stars.

1) Hit the first building to knock it over. This should kill the Mustache Pig, Helmet Pig, Small Pig, and Medium Pig located near and in the fortress.

2) Launch the second bird as low as possible near the Small Pigs in the box. Deploy the egg bomb when you get close to the box. This should send the white bird flailing into the building with the Medium Pig in it. I did this and got 3 stars.

Did over 71k on this one, used two birds. I blew the 1st bird right before the 1st building so it shattered the sidewall and let the bird recoil hit the roof edge, which pushed the building to the right and killed all pigs on the ground. Then, 2nd bird, threw it over the crate with the piglets and blew the bird there and let the bird's recoil throw it against the 2nd building roof edge. Quite easy to reproduce. Victory.
