I love Alton Brown but even he couldn't persuade me to abandon my pro-stuffing stance. My mom has always cooked the stuffing in the bird (with bacon mmmm) and it is so much more flavorful and succulent than the dry, flavorless and totally safe stuffing my mother-in-law makes outside of the bird.

I agree, properly cooked turkey should not have stuffing. The problem is (and everyone else in here appears to be wrong), is that stuffing inside the turkey tastes better than outside the turkey, which is called bullshit, fake, false advertizing the name of stuffing, stuffing.

The moral of the story is no stuffing is best, because it sucks unless you cook it inside the turkey, which unfortunately requires you to overcook the breast to cook the stuffing enough.

My grandmother used to put HOT stuffing into the bird, and when the bird was done, the temp was over 160.

My wife does this now too, and we always get stuffing hot enough to get out of the danger zone.

If you want a nice brown color that you see on the turkey in the magazines no problem! Just get a cheese cloth and soak it in melted butter (I infuse my butter with some garlic and herbs) Then cover the turkey with the cloth then you will end up with that perfect golden brown magazine picture turkey.

Yes. He means cooking IN the turkey. The main reason being that to get stuffing up to the proper temp (160) you end up OVER COOKING the turkey.

Knowing this I have always pre-heated my stuffing in the microwave BEFORE putting it in the turkey!

I agree totally. Make the dressing in a seperate dish, that way you can stuff the turkey-hole with aromatics! Plus, stuffing always seems to turn out too gluey, whereas dressing attains the perfect balance of dry exterior and moist center that takes just beautifully to gravy.

Please try using a brine with your turkey! It really adds moisture to the bird! My mom tried it back in 2000, and she's the type of person who doesn't like to go through a lot of trouble with food, she goes through the trouble to brine our turkey every year since 2000. Stuffing is tasty, but to this day we've never actually put it inside the bird. So much easier to keep it in its own pan and give the meats their space. It's enough trouble getting everything cooked as it is!
