It's most likely just a scary necromorph noise, and we just hear 'help' because we're projecting onto the wall-person what we would expect a wall-person to say if they were in fact still conscious. I really wish it was the case that the people would still be alive after infection for a while... it would be 10x more creepy, as this case would be.
