Dude thank you so much, I have been struggling with Agnolotti for a while (as recently as half an hour ago) and I picked up some excellent tips from that video.
Those look more like ravioli than agnolotti. You should try pressing them with your 2 fingers when there on there side rather than on the board it will make it not as flat looking..
