But the thing is, you are right, Erim is needed for Gades/Amon/Daos to be revived but then again we do not know if Erim never dies. Let's see. The plot of Lufia II is the first one in the story line. And the first time we see Erim is when she guides Maxim the way to the Dual blade, she just uses a different appearance.
And in the others she "hides" within someone else, beeing not herself all time. And it is speculated because... put it that way: Erim watches mankind if they "need" the evil within the world or not. Some uber beeing (Maybe Arek) decided that the sinistrals should be revived, thus Erim gets the objective to be reincarnated -> Lufia is borned. This is totally speculated, you're point of view could be right as well, we just lack the informations from either Erim herself OR another Lufia game. :)

Yah and Maxim calls her out and says "But you came to me now in the form of Iris, the Iris I know would help the lives of many and wish well on those who perished" And then Erim is silent then uses the last of her energy to open the way.
Wording on that is probably a little off but I haven't played/seen that part in 10 years but remember its such a memorable full-circle part of the game.
She also says that she helped Maxim more than it was allowed to her and she does not know why. And i think unlike Gades Amon and Daos Erim does not seek to destroy earth. In Lufia II it seems that she is more interessted what a man can do. She saved Maxim after his fight with Gades even though she should not, She opened the way so Doom Island does not fall on Parcelyte and guided Maxim through his adventure. But why? Because she wanted to or was she ordered by Arek?....
Yep that's the big unanswered question, I believe it's the prior rather than the latter though since in Lufia I she again helps the hero whether it was in human form of Lufia or not and again in Lufia III as Seena.
Do it once, call it a mystery - do it three times and uhm yah lol no matter the circumstances of reincarnations, all the same being to me.
And we know that except for Lufia II the reincarnated Erim does fall in love wih the Hero, so there has to be some kind of addiction to Maxim's bloodline.

I would miss Gades! He is my favorite Sinistral. Pure strength, badass look, he's all about destruction in its purest form. Amon is kinda bland.
