  • @trlkly But i don't think that you would find heavy cream and condensed milk without lactose. It'd be pretty rare. Plus I don't think it would be very sweet since lactose is a sugar.

    though admittedly, that wouldn't be much help in this recipe.

  • I dunno why but it annoys me when people dig right in the middle of cakes or breads. That's not even the best part.

  • Has anyone tried to make this without vanilla beans and instead using vanilla extract? Does that work okay?

  • @kiminokami So it does make a big difference? The dulce de leche I made was DELICIOUS but if real vanilla beans will make it better, I may have to just bite the bullet and do that. But aren't they expensive?

  • dolce de leche doesn't mean "milk jam", it means sweet milk. Dolce is the Spanish/Italian word for sweet or dessert.

  • so i made this cake and did not use an good eats recipe (shame on me) it was still food network it came from the magazine but i was watching this to know what to look for...well that recipe wasnt good it was too much milk and and didnt absorb all the way even with 2 days in the fridge...will be using good eats like i normally do

    quatro leche is a dessert made like tres leche but with the added ingredient: cajeta, which is a milk-based syrup. Not all tres leche has whipped cream but I don't know of a better topping.

  • faster way to make Dulce de Leche (which we Brazilians call Doce de Leite): Put a can of sweetened condensed milk in a pan with water (literally, place the can inside the water, don't dump the milk in the water) and cook until it becames doce de leite. The top will be smoother than the bottom, but that's not a bad thing, if you know what I mean. Best way to eat it? With CHEESEEE.

  • It indeed is Alton's daughter Zoey(sp?). Her classmates gave Alton the idea to name one disc of one Good Eats DVD set the title "Morning Munchables". She also is in the Honey and Avocado episodes.

  • I don't think so. I think his daughter is a toddler still, or at least very young, but don't quote me on that. It's probably more like the daughter of one of the people on the set.

  • It certainly was. Season 4 in fact. With that in mind she would be a bare minimum of 7 years old, most likely older, as she seemed about 2 or 3 at the time.
