@entmage - Daub is actually unproven for iron age roundhouses and is merely assumed to have been used. Our roundhouse is based on the Deer Park Farms excavations in Ireland and those houses used a "double wattle" wall with no daub, but the gap between the two walls was filled with vegetation as insulation.
Don't bring "health and safety" in to it. There is no legislation to prevent accommodation, just the target customers couldn't rough it.
