Actually the most humane way to kill octopuses is by boiling. Two-thirds of an octopus's neurons are found in the nerve cords of its arms.

When you chop up an octopus, you're mostly just separating the octopus into smaller octopus parts with their own nerves.

However, if you boil a whole octopus, you're killing all the neurons at the same time, including those in the arms. In other words, you're instant killing the whole octopus instead of letting the separate octopus parts die slowly.
