  • Yeah he keeps going on about how he's out of his depth and the sushi chefs are beating him but come on, spend 10 years doing it and most people are going to be pretty damn good. Not putting down the great amount of skill required, but comparing half a day with a decade is a bit silly...

  • I mean it takes years to learn to be a sushi chef but in those years you learn many skills in the kitchen that Gordon has already spent 20 years mastering, so him catching on quickly really should not be a surprise to anyone.

    Thats cause theres so many places that cater to non-japanese like B.C Sushi. My general rule of thumb is dont eat at one unless at least 2/3 of the people sitting are Japanese.

  • I am actually quite stunned how great Gordon's dish looks, especially taking into account it was his first time. I tried making sushi a couple of times, simple maki sushi, and I couldn't even pull that off.

  • Spicy tuna and dragon roll, whatever the hell that is, are not sushi classics. A few of the more serious places around here have signs to the effect of, "please do not try to order a spicy tuna roll".

  • @evanconway umm no, ive been to a couple sushi bars in japan, my friend didn't eat sushi so we ordered tempura for him... and they actually made it :D

  • how can u taste the difference between sushi made by a good chef and a bad chef? i mean, theres no cooking. all the ingredients are raw. to me it looks like its only the looks they go for. if i use the same amount of each ingredient as a top sushi chef, my dish would probably look shitty compared to his. but the taste should remain the same?

  • @MuayThaiViking Well there are some elements that really make good sushi stand out. It's the texture of the rice, how well it is molded and packed, the stickiness of the rice, the vinegar mixture (well balanced), the wholeness of the grain, the texture and freshness of the fish (which depends heavily on the cutting technique and handling), etc. One must also know what sauce best suits a piece of fish etc etc.

  • @MuayThaiViking The taste will not be much different..you are right about that one, but if the amount of rice is not up to proportion as all the other sushi as well as rolling the sushi not tight enough and the slicing of the fish are not even, it will create an experience of eating different type of sushi when eating it and gives an unpleasant feeling. It is actually not a huge difference as burning a fish on a pan and a well cook fish...

  • @MuayThaiViking It's the small things that would make the difference. If you don't wash and cook the rice exactly the right way, if you cut the fish wrong, the flavour and texture will be off, that sort of thing. For things like the avocado and fish eggs there'd probably be no difference though.

    Also in Japanese cuisine asthetics is just as important as taste. That's why you'll see Japanese chefs making beautiful works of art out of vegetables and fruit.

  • OMFG that Dragon Roll looks sooo YUMMY!!!! While people may say that Gordon is hard as nails, in reality he is one of the BEST chefs in the GLOBE. He also knows when to have a laugh and when to be serious. When he does give out praise and compliments they are genuine and deserved. He is truly gifted and I doubt that many chefs can match up to his expertise. Sorry if there are people here who won't agree with me on this but I think its true. I actually enjoy his outbursts they are funny lol xDDD

  • Very good for a first timer.. Ramsey got a heart to LEARN making food. If you ask any chef to copy another chef food "recipe". And he also got instructed with proper english. So Its pretty easy. Good Teacher + Good Student = Good Presentable Food.

  • @EDSTAR0000 on my point of view, making sushi w/ your hands is actually quite faster then using gloves and that's traditional, although your hands have to be moist and little wet in order to keep the rice from sticking on your hands a lot. A lot of sushi chefs know that there hands have to be clean in order to handle ready to eat foods.

  • get this right, u rather they use hands making food infront of u, or any food done behind a closed kitchen? go into any kitchen and u would then find u prefer the cleaniness of sushi or u wont ever eat out again... no kitchen like home kitchen, either u dont eat out or u dont think about what's in their kitchen

  • 13 minutes to make that Dragon roll on his 1st attempt and it came out well? It would take me an hour or so my first time, and it probably wouldn't be fit to serve! I don't think people understand how difficult it is to make restaurant-quality sushi especially if you've never tried before. The master who made it in 2 minutes has been training for over 10 years! True sushi chefs take their training very seriously.

  • I don't think he cares about mastering it. I think he is just stretching out and trying to experience other cultures. He is already a master of many things: managing people, pressure and performance for starters.

    You should think of Gordon as a conductor of an orchestra then you might begin to understand what he's about.

  • Please don't take this the wrong way. I have great respect for Gordan and absolutely enjoy his shows (except the profanity) as well as his recipes. I do agree that he is a great "conductor".

    I suppose what I was trying to say is that the cooking philosophy of the east is totally different form the west. (not "better", just "different" )

  • For Gordon to even scratch the surface of experiencing it he has to adopt an entirely new attitude. Only by calming himself down that he can truly experience the Art of Asian Cooking in its true sense.

    Check out "Gordan Ramsay makes Dim Sum, part 1 & 2" on Youtube, and you would understand what I mean.

  • Gordon, it call Japanese Efficiency and I heard it would've taken 7 years to master and they don't even talk about the basics like the choice of knife and the art of slicing with fish to retain it shape & flavour (always single edge).

    All Asian (not sure Indian though) wash their rice. It only the westerners who deemed unnecessary!

  • This one of those art appreciation show. You can never do this at home by just watching. It's the reason why Sushi cost a fortune. It takes three years or more just to learn to wash rice. In three years, you could have gotten a degree in Accounting and make a lot of money.

    Sushi cam from a fisherman's meal of leftover fish preserved in vinegar and wrap in rice. Today, it's a rich man's meal.

    Times have changed.

  • Ask your average accountant and your average sushi guy how happy they are with their professional lives on a given day...

  • I worked in a casual dining restaurant where we would have 2-3 sushi dishes as part of the "asian" option and the cook time to make a roll with shimp, avocado, cucumber slices, and wasabi mayo plated and finnished was like 4-5 minutes. The fact that this guy just made a role exponentially harder and in a fraction of the time is downright astonishing (considering i'm no sushi cook)

  • Considering he is one of top chefs in the world and he does have exceptional skills. It's like a racing car driver trying to learn how to drive a 11ton truck, if you have the basics, it's easier to pick up another skill
