  • @xeeloveanil heh! quiz him why don't you...chef Nick went to the Culinary Institute of America dude! Be specific with your quiz questions too...he likes them hard! Dare you...really...but I think you need to show me your credentials for asking questions and criticizing too, just to be fair ;)

You are assuming lechon is the only thing he can cook? hahaha this would be the very tip of the iceberg but we couldn't fit everything he knows into one show. That would require encyclopedic volumes. Your comment was an irresponsible diss on a chef you watched on a 28 minute segment...and we don't even know how well you are to judge...who are you anyway? where's your diploma or your video?? just askin' ;)

  • It's ok. But lechon kawali is not our national dish for god sake.and ifs cooked in the oven ,is not lechon kawali. It's lechon de horno.I think the chef need to study more and learn the Philippine cuisine. It's ashamed

  • good technique! I was craving this earlier this week and been thinking about cooking it. But unfortunately lechon kawali is probably like one of my dad's FAVORITE FAVORITE foods. He can't have it though due to health reason... and it'd be kinda messed up eating it infront of him, while he can't have any. But one question. If it's baked like this is it drier than it is when it's fried?

  • hahaha! Point taken...it's "Chef' Nick's Lechon Kawali" and he has taken the liberty of not boiling it in oil in a kawali (hear him say something to that effect at 4:42). See comment below...Thanks.

  • Wait a sec. I thought this was lechon kawali. As in deep fried in a kawali. This is technically lechon sa horno.

  • Cool! We do say (at 4:42) it should be boiled in oil, but we chose to crisp it by roasting instead. But you are right again! This is technically Lechon sa Hurno! Hey, come be on my show! Are you in Cebu? :)

  • Lechon kawali is the national dish of the Philippines? No it's not.

    Lechon perhaps, and that means roasted on a spit. Or Adobo. And some consider Sinigang the national dish as well.

  • Yes I also read that some people argue lumpia and bistek to be a "national" food as well. I am partial to lechon kawali myself. This one was particularly crunchy and the fat was crispy fat on it was delicious as usual. :) I should have said that but I was speaking off the cuff and a little nervous- first show and all...will try to be more accurate next time. Thanks~
