this looks so delicious. I was thinking how to make Pumpkin bread the other day. I made the meatballs with the recipe from your food blog and they taste really good. Chef John, I hope you make Rye Bread soon. You are my FIRST ever favourite chef. I like the way you make baking and cooking look easy to do and so enjoyable. Thank you so much :D !
this looks good! what do you do to make it more moist? and could you make a video for zucchini bread!?!? but im gonna try this pumpkin bread out first thanks!!
OMG !!! I just made this and its so good, word to the wise,...pie filling instead of puree......other than that mmmmm wicked delish ! thanks chef John
Chef John, When you try another improved version of this, exchange pecans or brown sugar or honey roasted pecans, I'm not from the south but I live here now, and I had the most amazing pumpkin bread here, and that is what she used!
I know you responded after my comment regarding dusting the nuts in flour before mixing them into the batter (this ensures that the nuts don't sink to the bottom like yours looked like they did). You said it's not a good idea and you don't suggest it. However, I've been doing this my entire adult life when cooking. No pockets you talk of, etc. It comes out perfect every single time....and the nuts never sink on me.
Added 3/4 cup almonds, 1/2 cup shredded coconut instead of walnuts to one loaf.
And added 3/4 cup of dried cranberries to the other loaf with walnuts. Took them to the coffee shop and shared. Many happy faces this morning. Baked at 2 am.
Now I'm baking 2 more ciabatta loaves.
You have a great spot here, I thank you for your time and effort.
How do you think something like Pumpkin Pie mix would do in this? Since you said Bananas are richer, sweeter, and you wanted the bread to be a little more dense?
What could you use to make it more moist or sweet? My sister-in-law makes a pumpkin dump cake that is the moistest (is that a word?) cake I've ever had. Would a little oil do the trick?
@wolfgoblin I did roast and puree a pumpkin once for pumpkin pie. The result? Absolutely no difference. Making pumpkin puree from scratch is way too much effort; it doesn't add anything to the final product above what canned pumpkin can offer. Not true of most things but for pumpkin puree it really doesn't matter!
What brand 5 spice do you use, they all seem a bit different? I used to buy Stephen Yan's 5-spice powder, he had a show based out of vancouver inthe early 80's called "Wok with Yan". It was him and the Galloping Gourmet (Graham Kerr) in those days.
oh this is perfect, thanks, I am so excited, I bought some Dickinson pumpkin this week. I am gonna try it like u made it and also have butter/sugar for me. thx so much, this is perfect treat for those cold days whenI am relaxing reading a book with a hot cup of tea. take care, Kevin
The background music is too loud during the presentation, please don't use this one score. I like happy intro and ending music. Do you have a cold chef John ?
why would dusting your nuts with flour prevent them from falling to the bottom?
hah! well I might have to search this banana bread recipe... but please, if it isn't there, do a demo : )
make it the best you can too! this recipe as-is looks super easy and I could impress my family with a nice banana/pumpkin bread recipe for thanksgiving ^-^
of course, I can't take ALL the credit. hah. but the fact I did it myself will be enough.
everything you make is so practical, which is why i always go to your website everytime i need a recipe! i love how you use canned products like canned pumpkin and such, noone really has the time to roast a pumpkin for an hour or 1 1/2. practicall!
How funny you post this video today... my mom just made pumpkin bread (trader joe's box of course)... and it is baking as I am typing this!! What a coincidence ahah
@2222knex2222 make it yourself? wouldn't that be easier faster and you'll learn it for ya self instead of hassling a youtuber to show it for you, and if ya want mature video's of foodieness go and make ya own video's if ydon't like these ones
@tomwahtoes He has more that don't exist on YouTube. He has done some video recipes for other websites, and those videos are not on youtube. Go on his blog to find them :)
