  • Chef John, When you try another improved version of this, exchange pecans or brown sugar or honey roasted pecans, I'm not from the south but I live here now, and I had the most amazing pumpkin bread here, and that is what she used!

  • I know you responded after my comment regarding dusting the nuts in flour before mixing them into the batter (this ensures that the nuts don't sink to the bottom like yours looked like they did). You said it's not a good idea and you don't suggest it. However, I've been doing this my entire adult life when cooking. No pockets you talk of, etc. It comes out perfect every single time....and the nuts never sink on me.

  • Added 3/4 cup almonds, 1/2 cup shredded coconut instead of walnuts to one loaf.

    And added 3/4 cup of dried cranberries to the other loaf with walnuts. Took them to the coffee shop and shared. Many happy faces this morning. Baked at 2 am.

    Now I'm baking 2 more ciabatta loaves.

    You have a great spot here, I thank you for your time and effort.

  • @wolfgoblin I did roast and puree a pumpkin once for pumpkin pie. The result? Absolutely no difference. Making pumpkin puree from scratch is way too much effort; it doesn't add anything to the final product above what canned pumpkin can offer. Not true of most things but for pumpkin puree it really doesn't matter!

  • What brand 5 spice do you use, they all seem a bit different? I used to buy Stephen Yan's 5-spice powder, he had a show based out of vancouver inthe early 80's called "Wok with Yan". It was him and the Galloping Gourmet (Graham Kerr) in those days.

  • If you dust the nuts with flour...they won't fall to the bottom of the loaf. They'll be evenly distributed throughout your loaf breads.

  • @Lillian0813 sorry, but not really true, and besides they get little pockets of flour in the tiny crevices. thanks, but I don't recommend.
