  • just so you guys know. you should generally buy grade-A tuna or fresh tuna if you want to cook it for less time. like the guy in the video said, if you don't know where the tuna is from its probably best to cook the heck out of it

  • cooked through Tuna steak will have stringy texture, will it ?

    (That's at least my experience when I fry them in a pan on the stove)

  • gotta love that barbeque.. i bbq 5 times a week.... mostly with the gas grill , but still bbq. with some wood chunks for smoke. got to be carefull with sea food.. only dare eating it rare if you are SURE it is local and fresh.. most is caught, frozen and shipped and can be up to two weeks old by the time it hits your plate..I am spoiled , I live 20 minutes from the coast, but most Americans do not... That smelllllsss Guuudd... love you guys..

  • Why based the shrimp with the shell still on? No one eats the shell. Should have peeled the shrimp first and used that cast iron skillet to create shrimp scampi. Lemon,butter, and herbs. ;)

  • Hey VisionQuest2012, open your eyes and then listen to the vid narration! You can go ahead and make your shrimp scampi. But, shell-on jumbos is the preferred method of maintaining a moist and tender "shrimp on the barbie"! -BBQ Pit Boys

  • BBQPitBoys is right...no one with good sense would cook shrimp on the grill without the shell...you would just get dry, overcooked shrimp...sheesh.

  • If you know how to cook shrimp on the BBQ, they do not have to be dry, nor do they need the shells on. Peels on is a pain-in-the-azz for eating really.

  • we recommend "Shell On" for lower count (6-16/lb.) shrimp when grilling -preserves those natural juices. Shells easily come off when serving! -BBQ Pit Boys

  • It seems backwards but the more "done" a tuna steak is the more "fishy" it tastes. Stopping at rare or medium rare gives it a nice mild flavor.

  • you're right on, MrPloppy1 ....rare is best but then of course you need to ask, do you know where the Tuna came from? -do you trust your fish monger? Eating raw fish is not risk free i.e. parasitic worms known as tapeworms, round worms, and flukes, and also transmit infections caused by bacteria and viruses, such as hepatitis.

    Catch it yourself, or know where the fish came from and how long ago, is our standard for raw fish BBQ.

  • Right on brianairb85! Always somebody on here who doesnt get the concept of cooking these recipes barbecue style for that old time smoke flavor. yes, you could cook any of these recipes in the kitchen, but to me they just wouldnt taste quiet as good and would take half the fun out of it. I`ll take mine on the barbie any day of the week! It`s all about doing what you love....BBQ!!!!!
