Because the sets were "redesigned" for color in season two, 'italianman' (but in muted colors during seasons two and three, because the series was still telecast in black and white on CBS, and wouldn't be officially colorcast until the fall of 1965).

CBS, which had resisted color telecasts since 1959 [due to their rivalry with RCA/NBC], finally decided to schedule half of their prime-time schedule in color the following September...with "THE LUCY SHOW" appearing in color for the first time. Repeats of the 1963-'65 color episodes were finally rebroadcast IN color on the network, beginning (spordically) in the spring of 1966- and daily, from 1968 through '72.

Sorry, this might have been already posted, but I anyway I have read that this was Vivian Vance's last aired episode on The Lucy Show, spring of 1965 season finale, as a regular castmember of the show, kinda bittersweet.
I never knew until years later, that the reason in the 2nd and 3rd Lucy Show seasons you see all that awful blue eye shadow Lucy and Viv wore, was 'cause those seasons were original aired in B&W but filmed in color for later syndication, and the shadow helped them photograph OK in mono. Already here, you can catch Lucy checking out the cue cards off-screen sometimes, which becomes annoying. :-o
