I added some mushrooms, caramelized them just a little then added the flour. next time I will add a little more Chipotle to bring the zig up a level or two. thank you Chef John

I got around to make this a few weeks ago for my mom and my brother, and it tasted absolutely amazing! I made the gravy with chipotle sauce instead of chipotle powder, since they don't sell it over here, and I replaced half the liquid with low- fat cream (about 10- 15 % fat. It's specifically used for cooking where I live and is called cooking cream) and made cream gravy. I can safely say that this is one of the damn best chicken recipes I've ever tried. Thank you very much for sharing!
i don't cook much myself as i still live at home and we have a large family.. buying chicken breast fillets for all of us would be quite expensive and it seems to be cheaper and easier to buy granulated gravy which you can just add water to.
If i wanted to make a bigger size, 6 persons, i just triple everything up right? Also wondering if maybe adding some red wine to the sauce would be a good idea to give it some extra flavour? or white wine? please reply
@w3stwood I think they're very similar - Chicken stock is water that is cooked by some vegetables and chicken. It's just that one process. But a soup is usually a lot more steps - like adding a roux, adding creme, cooking with legumes or cooking pasta in the soup, etc.
In the end of the day, a soup is usually a meal on its own, but a stock is an ingredient.
just a thought: maybe you could share some healthy but tasty recipes ? love all the food you post but id love it even more if you would post healthy food series :) :)
@foodwishes Chef John, while this was a fantastic dish to make and eat, my gravy was slightly bitter when I made it. I added some honey in to try and counteract the bitterness, but do you know what might have caused it to be bitter?

If you're ok with dairy, you can do the butter and flour thing to thicken it, and just use vegetable broth, wine, fruit juice, or any other vegetarian liquid that you think would taste good. If you don't do dairy, then I don't believe you'll want to try the butter and flour thing (it's called a rue, I think) - I don't think there's a substitute for butter that would work. Maybe you could thicken your sauce with a cornstarch slurry instead.
Speaking of Fond, I had nice one going in my pan this evening. I pan fried a steak, and just for laughs I took that Fond, added some butter and some beef stock, salt and pepper, and poof a nice sauce to go with my steak. Sure beat A-1 for a change. I just love getting a good Fond in the pan, it means I did it right.

@chineezwhitegirl Don't use EVOO for pan frying. It spatters, and burns if overheated. Use canola, or another refined oil with a high smoke point.

Honestly, I've never had problems with spattering and burning/smoking when using olive oil.
