  • Grilling is the most over rated cooking technique EVER! No pan = no pan sauce. Rest my case. :)

Do that exact preparation with beef instead of chicken and swap out some of the stock for wine... you'll never bbq a steak again.

  • enjoy...

  • It's hour 4 now, I'm sitting here, plate under the computer monitor , but nothing is happening... will continue to wait another 8 hours, make camp by night fall... I hold out hope... I can hear the wolves though....

  • lmao, i just made it. It was AMAZING!.

  • FRENCH TOAST!!! PLZ

  • i pounded out your mom about a half an inch thick :)

  • @videofreakmanic123 hahahahahahahahahahahhahahahhahahahahahahhaahhaahah jk thats not funny at all

  • just lol

"Look at that color! Which I believe some people call..... a hue."

  • What would you serve this with?

  • It looks good but I hate blood stains on my underwear.

  • sometimes, I wonder what chef john looks like.

  • @ghidfg why wonder?

  • @ghidfg he has a video showing himself

  • what if i have canned chipotle in adobo sauce? what can i do with that?

  • I tried this recipe. o.o It's so good! This is my favorite recipe now!

  • ive watched YEARS of food videos and never saw such a clear demonstration of making a pan gravy from fond and flour etc.

that stuck in my head like.... like.... fond???

    bravo.

    great job.

  • I made this for Poutine. IT WAS AWESOME ! :D

  • Why do we watch cooking tutorials at 1 am, 2 am ... lol

  • Rxdtcgyvgyvugvug ugbugbugbugvyfcfyv sorry I was sipping my drool of my iPad

  • I want to do this!

  • Im making this for dinner!

  • guess what I just did ?

I heated up about a quarter inch of oil in a pan , and fried some frozen cordon bleu's , and when they were done , I made this sauce with the remaining oil.....

LOL just kidding , I just drowned my keyboard with drool ( .____.)

  • Oh man I just made this and got a standing O for the gravy, no lumps at all. while the chicken was cooking I put the chicken stock in the freezer so it was nice and cold. I added some mushrooms, caramelized them just a little then added the flour. next time I will add a little more Chipotle to bring the zig up a level or two. thank you Chef John

  • LOL the whole time I am thinking "you can fake the funk but you can't fake the fond" I'm going to make this tonight. Thanks Chef John! It will be my 1st try at making pan sauce.

  • Can you substitute the chipotle for something else? Other than cayenne...?

  • made it tonight for me and my boyfriend, i just started cooking only a few days ago and it is so easy to do, and tastes amazing!! i paired it with some mashed potatoes which tastes great in the gravy!

  • I just had my dinner, but really feel like I've been starving for years after watching this :)

  • I've made this four times and I'm gonna make it again right now. Thank you, Chef.

  • I'm making this tonight.

  • I tried this tonight - couldn't get chipotle so had to substitute (you guessed it) cayenne. And no word of a lie, it turned out looking just like Chef John's - proof that this is really easy. And it was super-good. Next time, maybe a bit of white wine or marsala before the stock, or I might use a bit more stock and add a drop of cream with some fresh tarragon. Because why? Because I'm the boss of my gravy!

  • @FlowersInHisHair i hope you know i read that entire thing in Chef John's voice

  • @fruubful That's not surprising, because I typed it in Chef John's voice. True story!

  • @FlowersInHisHair get out of my heeead! haha that's just impressive!

  • perfect video

  • I am the boss of my gravy. *giggle*

  • the people that dislike this can't taste it.

  • How many calories?

  • You're a Master!

  • i've watched this a few months back, and when i watch this again, i can smell the gravy.. yum

  • Oh no...I just bought powdered gravy a few days ago....and forgot to buy stock too. Thank you so much for this video! I've always wonder how to make gravy but I don't need to worry anymore. You are the best/funniest chef ever.

  • Dear chef John,

I am a professional cook and photographer myself and I can't help myself to tell you this:

    You Rule!!!

Great recipes, very good information you give and your videos are fun to watch!!!

    Keep up the good work.

    Oh yeah, I subscribed 30min ago :D

  • Chef John.....Thanks so..so..so..so MUCH!!! for this recipe....I would always buy the powder or jarred gravy..hahahah...But now!! I could make my own...This recipe turned out GREAT for me...Thanks again!!!

  • my mouth is watering looking at this shit at 1 in the morning lol

  • thank you so much chef john...i couldnt remember how to make a pan gravy n i remembered u had a pan gravy vid on here so i looked it up n it helped so much! now im gonna have a yummy dinner! :D

  • I got around to make this a few weeks ago for my mom and my brother, and it tasted absolutely amazing! I made the gravy with chipotle sauce instead of chipotle powder, since they don't sell it over here, and I replaced half the liquid with low- fat cream (about 10- 15 % fat. It's specifically used for cooking where I live and is called cooking cream) and made cream gravy. I can safely say that this is one of the damn best chicken recipes I've ever tried. Thank you very much for sharing!

  • omg i did this myself amazing recipe!!! it was delicious i tossed some broccoli with the gravy too it was so gooooddddd!!!!!!!

  • i don't cook much myself as i still live at home and we have a large family.. buying chicken breast fillets for all of us would be quite expensive and it seems to be cheaper and easier to buy granulated gravy which you can just add water to.

  • tasty

  • my tummy farted.

  • i love you chef john!

  • That little chunck of chicken that Chef John never got on his fork in the end really bothered me. I wish I could go eat it for him!

  • @tastycajun0381

    I'll try, thanks :)

  • 3:10 you need to be locked up.

  • my dinner was useless

  • Chicken and Bacon.... is there anything you CAN'T make taste good with them?

  • @tastycajun0381 Nope, just in case I don't find them in the market. I actually like spicy things :)

  • Damn it, why do I never have chicken at home when I crave it the most?! DX

After watching this video, my hot dog with potato salad will not taste as good.

  • I made this last night, it was so delicious! Thank you for an easy week-night recipe.

  • Awesome, gotta try this recipe, thanks Chef John.

  • Chef, you're making my mouth water so badly...I'm going to cook this over the weekend!

  • its not that im not happy about it but where did all the video ads go. i wanna help u chef john :D

  • will this work with a non-stick pan?

i mean will it caramelize the pan?

  • 9 people burnt their chicken!

  • Any substitute for chipotle? Chillies?

  • @yashgupta21 your the boss of your gravy, add whatever you want :-D

  • omg i made dis it was hit among ma family!!!!everybody lovedd it!!tnk u !!!

  • OMG. I LOVE YOU, and the food is OUTSTANDING. This was sooooo easy. Thank goodness I subscribed to your channel.

  • THANK YOU! :D

  • Tried this and the sauce turned out a lot darker than it looks here.

  • @amilani3 You probably cooked the flour too long.

  • I masturbated to this.

  • what exactly does the flour do in the gravy? is it absolutely necessary? I cant use any type of wheat :(... any other alternatives?

  • OMG! If you would've added some biscuits to that! :O

    Food porn ftw!

  • If i wanted to make a bigger size, 6 persons, i just triple everything up right? Also wondering if maybe adding some red wine to the sauce would be a good idea to give it some extra flavour? or white wine? please reply

  • Cool :-)

  • I love food wishes recipes <3

  • thank you chef john i just made this for my wife she loved it. I just subbed chipotle with paprika didnt have chipoltel in the house A++

  • Is chicken stock like chicken soup? English is not my native language and i dont really know what that is....

  • @w3stwood I think they're very similar - Chicken stock is water that is cooked by some vegetables and chicken. It's just that one process. But a soup is usually a lot more steps - like adding a roux, adding creme, cooking with legumes or cooking pasta in the soup, etc.

In the end of the day, a soup is usually a meal on its own, but a stock is an ingredient.

  • *sits and eats ramen noodles* o_o

  • A hue? Easy there, Sir Pants of Fancy.

  • God damn you Chef John! Why do you have to make me hungry at 3AM?!

  • Why no garlic?

  • I just made this and it was awesome. Thanks, Chef John!

  • looks exactly like the other other recipe

  • just a thought: maybe you could share some healthy but tasty recipes ? love all the food you post but id love it even more if you would post healthy food series :) :)

  • Yum!!

  • With some yellow rice or seasoned red potatoes and roasted asparagus, and a glass of red wine....yes!

  • @foodwishes Chef John, while this was a fantastic dish to make and eat, my gravy was slightly bitter when I made it. I added some honey in to try and counteract the bitterness, but do you know what might have caused it to be bitter?

  • add mash potatoes and youre in HEAVEN!!!

  • Oh my...i am sooo hungry now!!! Great!!! Looks super yummy! :)

  • Oh wow, how simple!! I am gonna make it for my love and pretend it took hours!!

  • This looks great!

  • Looks super!!!

  • I'm the queen of my castle and the boss of my gravy! 2:03

    (Sorry, couldn't help myself.)

  • i will never buy powdered gravy again.......i swear...

  • Tried it just now. Delish :D

  • Chef, is there a way to use this pan sauce technique with a vegetarian dish?

  • @missavaricebliss use vegetable stock

  • @missavaricebliss Depends on how vegetarian you are. If you're ok with dairy, you can do the butter and flour thing to thicken it, and just use vegetable broth, wine, fruit juice, or any other vegetarian liquid that you think would taste good. If you don't do dairy, then I don't believe you'll want to try the butter and flour thing (it's called a rue, I think) - I don't think there's a substitute for butter that would work. Maybe you could thicken your sauce with a cornstarch slurry instead.

  • @tastycajun0381 you paused the "Melty Butter Sizzle Slide" video for this?

  • trying it this up coming weekend =O

  • Speaking of Fond, I had nice one going in my pan this evening. I pan fried a steak, and just for laughs I took that Fond, added some butter and some beef stock, salt and pepper, and poof a nice sauce to go with my steak. Sure beat A-1 for a change. I just love getting a good Fond in the pan, it means I did it right.

  • like always, I'll try it out. Thanks.

  • no matter what i do with chicken breast they always turn out dry or under cook..... any suggestions on keep them moist while cooking?

  • @kuel buy a meat thermometer! Get it perfect every time!

  • @foodwishes can you use olive oil instead of butter?

  • @kuel Pound out your chicken it helps the chicken stay tender and cooks faster leaving it tender and juicy

  • @kuel if you dont got one, just cut it when you think its done to see the center, no red juices/meat your good

  • @kuel

Marinate in anything acid for at least 2h (more is better)....

  • @kuel Yeah, dont under or over cook them and you should be fine

  • @kuel ...hire Chef John to cater for you!

  • chicken fried mmmmm

  • Awesome recipe!

  • What do capers taste like? I always thought they looked like little olives.

  • Chef John, your voice sounds as smooth and rich as that gravy looked!

  • I AM the boss of my gravy!

  • great recipe, nigga!

  • As always, awesome vid. I must admit I cringed when you took a sharp knife to your lovely enameled pan, however. But I guess that's the kind of reckless behavior you can espouse when you're a super-famous youtube chef. ROCKSTAR!@#!@!

  • @brissy1234 i'm not 'honestly' telling u anything, although i googled it and someone did write that they couldnt find it in woolies or coles.....so i guess its not easy to get here

  • Yeah.. I totally said "fond"... *shifty eyes*

  • CHICKEN PAD THAI PLEAAASE!

  • warm breasts

  • Can you have a fond while using a non-stick pan? How do you feel about nonstick? I think they're very convenient for cooking/cleanup, but I notice that you hardly ever use them.

  • unfortunately, no matter how delicious this looks, i can ever eat chipotle ever again after the south park episode with billy mays in it.

  • im begging you!!!! veggies??? please? a vegetarian recipe wont hurt you =[

  • i havnt bought gravy powder for yrs...

  • I know it's easy, but im terrible at making a Roux

  • what type of skillet do you use? I just can't get the same effect as you when I try these recipes..

  • I am a 15 year old girl and I just want to say thank you Chef John!!!! I have been cooking for my family since the beginning of the year and they have loved EVERY single meal! I'm able to do what I absolutely love because of you! :)

  • Hi, Chef John! Please could you consider doing a liveshow via YouTube? I, as well as many others I'm sure, would love to see you cook in realtime! It'll be like your own live show :D!

Great recipe, by the way. ^-^ <3

  • whenever I use EVOO, it pops up and hits me. Is there something wrong with my pan or something?

  • @chineezwhitegirl Don't use EVOO for pan frying. It spatters, and burns if overheated. Use canola, or another refined oil with a high smoke point.

  • @ZombiedustXXX If it's made specifically for frying/baking it shouldn't. lol

Honestly, I've never had problems with spattering and burning/smoking when using olive oil.

  • That butter looks familiar. :P

  • I bow to the Chef John; master of Food Porn

  • Ey bromigo. Care to tell me what the difference are between "sauce" and "gravy"? Always wondered.
