First: If you routinely roll cars over, I would not recommend cutting the top off. Alternately, if that was a once-in-a-lifetime occurrence, you should be fine.
If you use any structural reinforcement, put it on before you cut. Remove any sunroof assembly. Use a Sawzall. Make sure severed wires don't short out. You may need shoulder seat belts and a third brake light to pass inspection. Rainwater ponds in a cover, so I have an inelegant solution consisting of plywood and a "roll bar."
I just rolled my cavalier into the ditch 3 days ago, and I was planning on doing this to it. Do you have any suggestions? (Its a 2 door). I think it'd be something fun to do when I'm bored...
No, we just drilled some drain holes in the bottom and used boat speakers in the rear. After getting caught in the rain a few times (and generally needing to dedicate garage space to Snippy), I plan to make some sort of fabric top like Jeeps sometimes have.

We welded some square steel tubing underneath the rocker panels so that the car wouldn't sag in the middle.
I didn't find much material on how to do this--we just did it. Good luck.
