The best part of the whole thing is that he serves it with NO cheese. You can probably get it with, but why would you. Perfect brisket...enjoy the taste of a very nice cut of meat on its own. His recipe would make for some supermarket-type Smoked Meat like Ziggy's (Loblaws brand). He's using some rather lean brisket meat, he needs to use something more marbled. Also, most traditional recipes call for a whole week of marinating, and more smoking than he's doing here. I guess his time frame doesn't allow for it.
Smoked meat beats the pants off of NYC pastrami any day of the week. Same with Montréal Bagels.
@nerkman I beg to differ, I enjoyed the smoked meat I had, but NYC pastrami beats it hands down. But I can see how someone can like smoked meats better.
