  • You can but you defeat the purpose. Try using dried cherries instead. (I don't like raisins either.) I also use rice wine vinegar instead of red wine vinegar. It takes less sugar.

  • My mother made this dish, with eggplant, celery, capers, onions, green olives (sliced no pits) and tomato sauce. No raisins and no peppers. A little sugar at the end, it's suppose to be sweet. My mother cooked this dish longer than Giada did. She would make tons of this at one time and put them in glass jars and give them to me and my brothers. We ate it with Italian or American bread.

  • Would probably hold together better and be easier to eat at a picnic if she had made this into a panini. I'm keen on anything she does with fresh mozzarella.

  • if you use sicilian eggpplant, they are like a light purple, olives, no raisins, carrrots,celery, no peppers no fruit. thats what I use. That's where my family gets theri caponata. we are from cinisi, palermo, sicily.
