yes congress did not want to establish a national religion because it would have been pointless for original colonist to escape religious persecution. But the "wall" of the Danbury letter were not to limit religious activities in public; rather they were to limit the power of the government to prohibit or interfere with those expressions.

The separation of church and state is guaranteed by the first amendment stating that "Congress shall make no law respecting an establishment of religion, or prohibiting the free exercise thereof". This prevents the government from providing any kind of preferential treatment to any one religion which would act to signify a nationally recognized and affiliated religious ideology. The Danbury letters were the letters Jefferson wrote to a group of baptists wherein we get the separation phrase from.

FYI: The Washington quote about the U.S. not being founded on the Christian religion was never spoken by George Washington. It is from the Treaty of Tripoli, signed by John Adams and ratified by Congress (unanimously, I think.)
