  • I'm just referring back to your video as this will be about the third season of using your instructions to can our home grown tomatoes. It is fantastic! Simple, easy to follow and clear. I also love your music. I like that you don't turn canning into something terrifying! Following your instructions I've canned many batches and had NO problems at all. Thanks again for this great video : )

  • Peace be onto you Bitterbetty thank you for sharing the information with all,but just a question? Is it not contaminating the tomatoes if your adding things like salt or handling them with your hands to put them in the jar OR covering the entire jar with water as to cross contaminate the jars through the impurity of the water? I have seen a few videos now and there seems to be allot of talk about using boiled utensils for all the handling and even a funnel.

  • I saw another video doing this technique of cutting the end and just squeezing it. I can't find it anywhere and couldn't remembert how to do it... Glad you posted this! Thank you! :)

  • You can never go wrong with Django Reinhardt..... Graphics were a little too fast but I still found the video informative.

    I've never canned before.... Going to have to try it this year since It's looking like I'm going to have a much more successful vegetable garden than previous years and the old guy that I used to give tomatoes and peppers to is no longer with us.

    I've had food poisoning once before. Deathly afraid of getting it again, so I want to make sure I do this right.

    Tomatoes are a very Low Risk food for botulism which is the prime suspect for food poisoning with canned items. Botulism is killed by 10 minutes of boiling, 45 minutes of during processing plus, being made into sauce means another 35-40 minutes when I open the can.

    The second reason is because I am concerned that 85 minutes of processing will destroy the flavor and texture.

    I also have 3 years of canning with this method and 0 incidents of toxicity... As near as i can tell.

  • Okay Bitterbetty13, to give it a fair shake I watched the whole thing again and I actually like the music and it wasn't too loud, just right most the time. You have some good ideas that I will include the next time I can. For the person that says the Ball Guide says 85 minutes, which copy is that because mine says 45 minutes. I usually do 50 to be safe. And I do agree with the other poster, the graphics are a little too fast sometimes. But overall, this is a very good video for canning...

    I also have a Ball guide that says 45 minutes ... but found 85 minutes referred to else where on the web on some pretty reputable sites...

    I will keep doing mine for 45 minutes for reasons posted below.

    As for the graphics... I am actually surpised you can make them out at all with this Loooow Res upload. And Next time I will try harder to make them longer and get a better resolution video uploaded.

  • @bitterbetty13 The new guidelines and regulations are due to the growing governent and political lobbying. 45 minutes is plenty, especially if you grow your own, and you can use a lid more than once. Don't listen to the new young "experts" that have never canned, but got a degree just to add more tax payer funded regulation and requirements. Good job on the vid. Thumbs up.

  • @TheBrassHole Our grandparents canned their whole lives without these new regulations and never got sick. It's a bunch of government hype meant to intimidate people. Common sense should always override policy.

  • Ball Canning Guide (the canning bible) says 85 minutes to be safe with this type of tomato canning. Also, why do you warm the jars upside down? Maybe I saw that wrong? Finally, most recommend doing one jar at a time: filling it, lid on, back in the water bath, then next, etc.

    Citric acid works to acidify too and is tasteless.

  • I'm a newbie to canning, but just this evening made 6 qts. of pickles. I'm practicing with them so when the tomatoes are ready I don't mess anything up. Canning is kinda fun, so I'm planning on doing peppers next.

  • great and informative video! i have tons of Mr. Stripey tomatoes from my garden this year that I plan on canning. I've successfully canned my banana peppers, so i'm moving on to tomatoes. thanks to this tutorial, I should be ready to roll! Also, that certainly sounds like Django Reinhardt music.. i wonder.. mmmm

  • I have ripped open the tomatoes and squished out the seeds with my thumbs before. But with these paste tomatoes, it worked fine to leave them in.

  • you probably could but skinning them would take forvever! Try oven drying them. cut in half sprinkle with salt and slow roast with low heat

    (150 degrees) and they come out sweet, tangy and chewy. Great for pesto sauces.

  • can you can cherry tomatoes? You know, the little ones that are like is salads?

  • probably you could but skinning them would be a heck of a project. I like to oven dry cherry tomatoes just cut in half spinkle with salt and do a low temp (175-200 degrees) warm oven for a few hours. Watch them so they don't burn.
