Props to all those who back up the argument that over-bruising the mint causes bitterness. A simple slap or rubbing the mint around the rim of the glass are ideal ways to release the flavour and smell of the mint leaves without making it bitter.
Also, mashed mint = tiny pieces of mint going up the straw. Horrible.
You guys are very stupid. This is his way to make mojito, and it certainly isn't a "wrong" way to make it. Usually (almost always) the mojito is made with just a little muddling and stirring.

Besides all the errors that are already mentionend hear, 4 quarters of a lime, i.e. one whole lime is waaaaayy too much lime. Those 2,5 tablespoons of sugar are not going to balance this out. This will taste too sour.
Go to La Bodeguita del Medio (Havana, Playa del Carmen, Puerto Vallarta, Beirut) and learn how to make a real molito! Earnest Hemingway is rolling over in his grave at the sight of this poor rum & lime cocktail, that is anything but a mojito!

@stejamc12 he used lots of sugar to cover up the rum, also muddling the mint leaves too much releases the chlorofil in the leaves, (the green bitter shit) ur meant to press em, not grind them, but yeh he didnt leave the mint in the glass enough nor use good rum v.v (he prob wasnt given good stuff on set)
@krycer123 i find if you put the mint in your palm and smack it gently a few times releases the flavour without the bitterness. I muddle palm sugar and lime then add rum and mint and shake before adding soda.. i tend to put fresh lime slices and mint into the drink as it looks better in front of patrons

@stejamc12 You CAN over muddle though. Not sure who you were responding to, but if you over muddle mint it becomes bitter. You should really do it fairly lightly, just to release the oils in the leaves; not mash it to a pulp.
@stejamc12 Actually, muddling the mint risks releasing chlorophyll into the drink which imparts a bitter taste. Simply taking a handful of mint and giving it a firm clap in between your hands is enough to release the aromatic oils without the bitter taste. It's easier/quicker than muddling. I hear a lot of bartenders whine about making mojitos in a busy bar, but they also think they have to sit there and muddle the mint for an extended period of time. Common misconception.

Bacardi is a Cuban rum from Santiago de Cuba. They were well established when they moved their business to Puerto Rico due to Communism in Cuba. You do not shake a mojito its bruised and ruined. See the original recipe by Bacardi here on utube. Sugar syrup is better than granular sugar due to its mixology properties to mix through out the entire liquid drink since you do not mix but stir gently.
Bacardi has almost no taste at all. If you like that, why not go for vodka? -.-
Furthermore, Bacardi is not a cuban rum. Cuban rum has a very typical aroma to it, which fits the Mojito a lot. You'd be missing that when using Bacardi.
Havana Club, Caney and Blue Bay are all great Rums to use in a Mojito in my personal opinion.
Also, I don't think you should bruise the mint too much, releases chlorophyl from the leaves which tastes bitter and little mint chunks will be sucked up your straw.

gently muddling mint and lime makes it release flavour and oils, beating the crap out of it like this guy makes it bitter you get all the flavour of lime pith rather than fruit or the exterior oils. as for the mint overly bruising it makesit bitter.
that's why i like using simply syrup instead of granulated sugar. you don't have to shake it to dissolve the sugar, so you can leave everything in the glass and you don't get mint shrapnel every time you take a sip.

First of all ... who the hell uses Brugal dominican rum to make a mojito? Second, a mojito is supposed to be served in a high ball glass. Third, you are not supposed to shake a mojito. Fourth, you never mix the ingredients into a mixing glass. Fifth!! ..you never use a strain a mojito.
How it should be done 1. Use a Highball Glass 2. Squeeze 6 lime wedges in and add the wedges 3. Take 10 mint leaves and clap between your hands. Add to the glass. 4. Add a bar spoon of brown sugar. Can also add some gomme syrup if you like it sweeter 5. Muddle 6. Add crushed ice (3/4 fill glass) 7. Add 50ml of Rum (I use Bacardi). Stir 8. Add crushed ice to the top 9. Top up with soda water 10. Garnish with lime wedge, mint sprig and pinch of brown sugar! 11. Enjoy!
Agree... That's exactly the way i make them. No shake, no stir. The brown sugar adds a honey bold flavor to it. I use Bacardi as well, but one time i experimented it with spiced rum (Capt'n Morgan) and it gave it a little spiced twist (like little hot cinnamon).
Okay - there are always different ways to make drinks but there are some things you should never do. Just like manhattans, a mojito should NEVER, EVER be shaken. Use a mixing glass, sure - but stir and churn.
And mojitos should have bits of mint in them. The crucial thing is that the mint should be bruised - either by gentle muddling or by the action of the stirring and churning - so the leaves don't break and make the drink bitter and full of leaf bits. So NEVER strain.
what a shitty tasting drink that must be. how to make a mojito my style (Bristol, England) 1- pick 14 good sized mint leaves 2- half shot of demerera gomme 3- half shot fresh squeezed lime juice 4- use flat end of bar spoon to muddle mint leaves into gomme and lime juice. 5- taste 6- amend if neccessary 7- add fine crushed ice up to 2/3rds of the glass 8- add desired rum (personal favourite Especial) 9- stir 10- fill rest of glass with ice 11- stir 12- splash soda 13- 3 drops bitters DONE

Bacardi has almost no taste at all. If you like that, why not go for vodka? -.-
Furthermore, Bacardi is not a cuban rum. Cuban rum has a very typical aroma to it, which fits the Mojito a lot. You'd be missing that when using Bacardi.
Havana Club, Caney and Blue Bay are all great Rums to use in a Mojito in my personal opinion.
Also, I don't think you should bruise the mint too much, releases chlorophyl from the leaves which tastes bitter and little mint chunks will be sucked up your straw.

gently muddling mint and lime makes it release flavour and oils, beating the crap out of it like this guy makes it bitter you get all the flavour of lime pith rather than fruit or the exterior oils. as for the mint overly bruising it makesit bitter.

I've made a Mojito many times and I just muddle it like he does. It doesn't taste bitter and I never get any complains.
You just have to watch not to muddle the white under the skin to much because that is the bitter part of the lime.

that's why i like using simply syrup instead of granulated sugar. you don't have to shake it to dissolve the sugar, so you can leave everything in the glass and you don't get mint shrapnel every time you take a sip.

First of all ... who the hell uses Brugal dominican rum to make a mojito? Second, a mojito is supposed to be served in a high ball glass. Third, you are not supposed to shake a mojito. Fourth, you never mix the ingredients into a mixing glass. Fifth!! ..you never use a strain a mojito.

Agree... That's exactly the way i make them. No shake, no stir. The brown sugar adds a honey bold flavor to it. I use Bacardi as well, but one time i experimented it with spiced rum (Capt'n Morgan) and it gave it a little spiced twist (like little hot cinnamon).

Okay - there are always different ways to make drinks but there are some things you should never do. Just like manhattans, a mojito should NEVER, EVER be shaken. Use a mixing glass, sure - but stir and churn.
And mojitos should have bits of mint in them. The crucial thing is that the mint should be bruised - either by gentle muddling or by the action of the stirring and churning - so the leaves don't break and make the drink bitter and full of leaf bits. So NEVER strain.
It's ALL about taste.
