they look like lower powered stoves to save on fuel. Vortex type cookers would produce higher heat. I guess it depends on the type and style of dishes they are cooking but those burners are certainly lowered powered than what some chinese chefs use.
Just ate there tonight - not quite as clean now and very slow. One cook with dozens of orders stacked up on a thursday nite at 11 pm! The food was ok - I had rice/veggies with chicken and garlic pepper sauce. 8.50 euros. just so so
My 2nd favourite food in Amsterdam. Forget pancakes and Dutch cuisine, this is the dog's bollocks and that's probably what's in it.
